Healthy Chocolate Mousse
Ingredients:
170g Dark chocolate (at least 70% cocoa solids for best results)
3 Large eggs (separated into whites and yolks)
150ml Double cream (cold)
30g Dr Coy’s sugar
A pinch of sea salt
Melt the Chocolate: Break the chocolate into small pieces and melt it in a heatproof bowl over a pan of simmering water (bain-marie). Ensure the bottom of the bowl does not touch the water. Once smooth, remove from heat and let it cool slightly for about 5 minutes.
Incorporate the Yolks: Whisk the egg yolks into the melted chocolate. The mixture may thicken or “seize” slightly, but don’t worry it will smooth out later.
Create the Meringue: In a clean, grease-free bowl, whisk the egg whites with the sugar until they form soft peaks. Gradually add the sugar while whisking until you have a glossy, firm meringue.
Whip the Cream: In a separate bowl, whisk the double cream until it reaches soft peaks. You want it to hold its shape but still look slightly floppy. Fold this gently into your chocolate-yolk mixture.
The Final Fold: Using a large metal spoon or spatula, gently fold the egg whites into the mixture using a “figure-eight” or “Scooping” motion. Stop as soon as no white streaks remain to avoid losing the air.
Chill: Spoon into individual ramekins or a large serving bowl. Chill in the fridge for at least 4 hours (ideally overnight) to allow the structure to set.
