Lauki(Bottle gourd) spinach soup
Soup for kids as well as people suffering from inflammation
. Beetroot (cubed)
• Carrot (sliced)
• Red bell pepper
• Onion (chopped)
• Garlic cloves
• Bottle gourd (cubed)
• Fresh coriander leaves
. Spinach leaves
. Tomato -1
• Water
• Salt to taste
• Optional: black pepper or cumin powder
Method 1: Put Everything in Cooker & Blend
1. Add to cooker
• Put all vegetables (beetroot, carrot, onion, garlic, bell pepper, spinach, tomato,bottle gourd) into a pressure cooker.
• Add salt and enough water to cover vegetables.
2. Cook
• Pressure cook for 3–4 whistles (or until very soft).
3. Cool & blend
• Let it cool slightly.
• Blend everything into a smooth soup.Adjust & serve
• Add water if too thick.
• Heat once more, adjust salt.
• Garnish with cheese and serve hot.
🔹 Method 2: Bake (Roast) & Blend (Richer Flavor)
1. Bake vegetables
• Place all chopped vegetables on a tray.
• Lightly drizzle oil and sprinkle salt.
• Bake at 180°C (350°F) for 30–40 minutes until soft.
2. Blend
• Transfer baked vegetables to a blender.
• Add hot water and blend until smooth.
3. Heat & finish
• Pour into a pot, heat gently.
• Adjust salt and consistency.
• Add chopped coriander.
