Life tastes a little better after a slice of cheesecake! Today I am bringing you this Paleo Key Lime Cheesecake recipe, which is gluten free, grain free and vegan!
Ingredients:
Crust
300g walnuts (soaked and dried)
1 tsp ground cinnamon
1/8 tsp unrefined salt
2 tbsp Coconut oil
3 tsp coconut sugar
Filling
600g cashews (soaked and dried)
100g Maple Syrup
1/2 tsp unrefined salt
2 tsp vegan gelatine powder
1 can full-fat coconut milk
5 drops Lime essential oil
Zest of one lime
Directions:
1. Use a food processor to grind the walnuts finely.
2. Add all the crust ingredients to a bowl and mix well. Pat down into a 20cm spring form pan to form the crust.
3. Add coconut milk to a saucepan along with the gelatine. Allow gelatine to “bloom” for a few minutes in the saucepan.
4. Heat milk on a medium-low setting.
5. Add the cashews, maple syrup, salt, lime essential oil, lime zest and warmed milk and gelatine mixture to a blender. Blend well.
6. Pour filling evenly onto the pie crust and smooth the top layer.
7. Refrigerate for 1-2 hours or until set.
