Quick Sesame-Teriyaki Noodle Soup. Serves 1๐Ÿฒ

Ingredients:

1 portion of noodles
1 chicken breast
4 TBsp teriyaki sauce
2 TBsp sesame oil
3 Tsp sesame seeds (white or black)
2 TBsp light soy sauce
1 garlic clove
1 red onion
6-8 cherry tomatoes
Handful of snap peas
1 x pak choi
1 spring onion
Pinch of salt

Method:
Roughly chop the onion into eigths. Crush the garlic. Cut the tomatoes in half. Remove the base of the Pak choi. Slice the spring onion.

Chop the chicken breast into bitesize chunks. Add to a small saucepan with 1 TBsp sesame oil on medium heat. Fry for 2 mins until browned on the outside, then add 2 TBsp teriyaki sauce and 1 TBsp light soy sauce and 1 Tsp of sesame seeds. Fry on low heat until the sauce becomes likes a glaze and sticks to the chicken. Add a splash of water if the sauce becomes to dry to avoid burning.

In a small saucepan, add the sesame oil, teriyaki, garlic, onion, tomatoes and mangetout. On low heat, cook for 3-4 mins until softer but not soft.
Add the dried noodles and add boiling water until the noodles are just covered. Bring to the boil and simmer for 3 mins until noodles are soft.

Mix in the soy sauce and add the pak choi leaves. Season with salt if needed. Simmer with the lid on (if possible) for 2 mins.

Serve up in a bowl, topped with the sesame seeds and spring onion. Enjoy!๐Ÿ’š

Here are some tips from our Care Team to help you navigate your Juniper treatment over the Christmas and New Year period

New Recipe!๐Ÿšจ
Creamy Mushroom & Tofu Skillet (vegan)๐Ÿ’š

Before cooking, for 1-2 hours, take the tofu out of the package and rest a heavy plate on top of the tofu block. This will allow excess juices to drain from the block
and create a more crispy tofu when fried.

Ingredients:
- 4 cloves of garlic
- 1 vegetable stock cube
- 2 red onions
- 300g chestnut/button mushrooms
- 400g (approx.) extra firm tofu
- 5 TBsp cornflour
- 2 Tsp mixed herbs
- 400ml boiling water
- Salt & pepper
- 200ml non-dairy crรจme fraiche
- 1 TBsp light soy sauce
- Handful of fresh parsley
- 4 TBsp olive oil

Method:
Crush the garlic. If you have chestnut mushrooms, slice them into thick slices. If you have button mushrooms, cut them in half. Slice the onions. Cut the tofu into 2x2x2cm cubes. In a mixing bowl, add 4 TBsp cornflour with a
generous seasoning of salt & pepper.

Coat the tofu cubes in the cornflour mixture. In a large frying pan, add 2 TBsp oil and fry the tofu on high heat until golden brown and crispy. Set aside. Fry the onions and garlic in 2 Tbsp oil for 5-6 mins until soft.

Add a splash of water if the pan becomes too dry. Add the mushrooms & mixed herbs and fry for 3 mins. Add the boiling water, stock cube, crรจme fraiche, soy sauce & season with salt & pepper. Bring to a boil then simmer for 10 mins until thickened. Add the final 1TBsp of cornflour to a cup with 2 TBsp cold water. Mix until smooth and then stir into the creamy sauce until thickened.

Add the crispy tofu pieces and a good handful of finely chopped parsley. Mix well and season with salt & pepper if needed.

Turkey mince bolognese
Prep time: 30 mins
Cook time: 30 mins - 1 hour
Serves: 4
Calories: 317
Protein: 31g per serve

Indulge in a wholesome delight: lean turkey mince, slow-cooked in a hearty tomato blend with satisfying wholemeal pasta.

Your protein source โญ
- lean turkey mince

Ingredients
- 500g lean turkey mince (choose breast instead of thigh mince if you can as it has less fat)
- 2 tsp vegetable oil
- 1 large brown onion, chopped
- 1 large carrot, chopped
- 3 celery sticks, chopped
- 250g brown mushrooms, finely chopped
- pinch of sugar
- 1 tbsp tomato paste
- 1 parmesan rind
- 2 x 400g cans chopped tomato (garlic and herb flavour, if available)
- 400ml low-sodium chicken stock
- cooked wholemeal pasta
- fresh basil leaves (optional) to serve

Method
1. Fry the turkey. Heat a large non-stick frying pan and dry-fry the turkey mince until browned. Transfer to a plate and set aside.
2. Fry the vegetables. Add the oil to the pan and gently cook the onion, carrot and celery until softened, about 10 mins (add a splash of water if it starts to stick). Add the mushrooms and cook for a few minutes, then add the sugar and tomato paste. Cook for 1 minute more, stirring to stop it from sticking.
3. Add the turkey, stock and Parmesan rind. Stir well.
4. Simmer on low. On low heat with the lid off, simmer the bolognese for at least 20 mins (or longer) until thickened. Serve with wholemeal pasta and a few fresh basil leaves. Enjoy!๐Ÿ’š

Indulge in a guilt-free delight with this Knickerbocker Glory! Hereโ€™s a quick guide to crafting this scrumptious treat:

**Ingredients:**
- 1 pack of sugar-free strawberry jello
- 2 tsp sugar-free vanilla syrup
- 100g high-protein vanilla yoghurt
- 100g berries
- 1 scoop low-fat ice cream

**Instructions:**
1. Prepare sugar-free strawberry jello following carton instructions.
2. Mix sugar-free vanilla syrup with high-protein vanilla yoghurt.
3. In a mason jar, layer 50g strawberry jello, 50g yoghurt mixture, and a handful of berries twice.
4. Top it off with a generous scoop of low-fat ice cream.
