I knocked dinner out of the park last night, I reckon…

I looked in the fridge and found some chicken style chunks, 2 carrots, half a courgette, and one field mushroom. I also had one potato and a red onion…. Put it all together and what have you got? Chikken stew! With some flour and Atora veggie suet in the cupboard I could add dumplings and make this easy midweek meal a little bit special…

1) fry onion and garlic til soft
2) add Chikken and let it brown slightly
3) add veggies, dried herbs (I used thyme) and tomato purée
4) add stock and flavouring (I used liquid seasoning, Dijon mustard and balsamic vinegar)
5) simmer for 15 mins until veggies are soft. Mean while make dumplings
6) half suet to plain flour is the ratio. I used 100g flour and 50g suit (plus salt, pepper and finely chopped fresh parsley) and it made 8 little dumplings.
7) pop dumplings on top of stew for 15-20 mins. Don’t check on them or they won’t be fluffy.
8) option to grill them for the last few mins to brown them off but keep a close eye as they can easily burn.

Ta da! 🎉 A perfect meal!

Can you believe this was fridge scraps?

I found three beetroots that had come in our veg bag that were starting to go a bit soft, some VERY tired asparagus - I managed to salvage the tips. The only thing I had to buy was the fresh dill because I couldn’t contemplate the beetroot without it (If you haven’t tried raw grated beetroot with a creamy dill and mustard dressing then please do it. Do it right now.)
It was originally going to be a salad… but while I was buying the dill I saw a packet of fresh gnocchi in the fridge section and it wanted me to take it home.
By the way, ignore the instructions. Don’t you dare boil the gnocchi. Fry it in oil until it bubbles and blisters and turns brown. It’s a whole different, and much better, thing.
I added smoked tofu for plenty protein, pumpkin seeds for crunch and… Ta da!
