After my daily celery juice (day 7/90), I opened the fridge andโ€ฆ well, not much was there. Most of my goodies are at the commercial kitchen, and I hate wasting food.
So I got creative.

A few crisp chicory leaves, some pea shoots, red onion, a handful of olives, a juicy tomato, and half an avocado got tossed together and sprinkled with h**p seeds.

Just when I thought I was doneโ€ฆ I spotted two little nasturtium flowers in the garden. Onto the plate they went. Why not eat like art?

It's summer, kids are on school holiday, catching up with family and friends having lovely days out.

When you have a family reunion for a birthday celebration and you have the family around and not sure how to give them healthier food without burning yourself and have less than 24 hours notice to creat a spread ๐Ÿ˜€also it has to travel good amont of miles to be enjoyed

This is my taken to do it for 10 people. Packed everything in cooler bags and display on our family member's home ๐Ÿ˜

Potatoes and rice

I love potatoes, I am Romanian so potatoes are my staple food.

Then comes all the gurus diets. Potatoes are not good for your health, to much starch, to high the glycemic index, can contribute to weight gain eating in excess in refined forms ( fried or topped with cheese)

Rice the same, although is gluten free white rice is not the best option. Possible arsenic content, easy to eat large portions, polished/ white rice stripped away of fibre, B vitamins and minerals

I understood most of it. Although if you cook them in healthy way you can give a different nutritional value.

But what do you do when potatoes and rice are mostly the side dish on half of the mains and you want to offer a healthier version.

Ta-dah, here comes my research and my new favourite side dish, ( can be eaten on its own, if you remember I said the simpler the best)

Parsnip rice! I love it!

Opening a new business is never easy. Involves a lot of trial and error. As a perfectionist I would like to be perfect ๐Ÿ˜Obviously that's not the case today but as someone said "if you wait until it's perfect you'll never do anything."

This is the face of a woman who finally knows what homeostasis means and whoโ€™s no longer afraid of quinoa. ๐Ÿ˜‚

A few years ago, I started realising that food - real, natural, whole food - was the missing piece in so many peopleโ€™s lives.
I was following all these brilliant American practitioners and thinking:
๐Ÿ‘‰ โ€œWhy donโ€™t we have this in the UK?โ€
๐Ÿ‘‰ โ€œHow can they have so much knowledge and so many sick people?โ€
(Then I remembered - the U.S. has over 200 million people and a lot of Coca-Cola.)

So I started searching for natural healing coursesโ€ฆ
And because I have zero patience and wanted to start โ€œyesterday,โ€ I found CNMโ€™s Natural Chef program and said YES.

โ€œItโ€™s only one year,โ€ I thought.
โ€œIโ€™ll learn to cook with ingredients I canโ€™t even pronounce.โ€
(Seriously, amaranth? Spirulina? Ashwa-who?)

What I didnโ€™t expect was a full-on deep dive into:
๐Ÿง  Biology
๐Ÿฆ  Microbiomes
๐Ÿซ€ Organs I forgot existed
๐Ÿ’ƒ Hormones
๐Ÿฆ‹ The thyroid and immunity system becoming my new obsessions

I drove my family mad.
I gave them unsolicited health lectures. I questioned everything.
It was like opening Pandoraโ€™s boxโ€ฆ but instead of chaos, it was kombucha and kimchi and so much curiosity.
But the good things for them they got the chance to taste, first hand, everything I was cooking!

Every class cracked something open in me.
Every recipe made me feel like I had a superpower.๐Ÿ˜
And finally, after many late nights, burnt nuts, hormone charts, and happy tears, I graduated.

And you couldnโ€™t wipe that grin off my face.

Iโ€™m endlessly grateful to my teachers, classmates, and my own stubborn โ€œI want to know more!โ€ energy.

Now? I want to give back.
To cook. To nourish. To share what Iโ€™ve learned with as many people as possible and guess what? I am starting with you.

Because this isnโ€™t just food.
Itโ€™s soul work.

Before I touch any ingredient, I pause.
I place my hands on my heart โ€” not out of habit, but reverence.

Thereโ€™s something quiet and ancient in that moment.
As if my hands are remembering what theyโ€™re really for.

Not just chopping or stirring.
But translating.
Transmitting.

I believe the heart has a language that the hands understand. I believe the hands are an extension of our heart.

We say โ€œcook with loveโ€ as if itโ€™s a metaphor.
But I think itโ€™s literal.
The love lives in the heart, yes, but it travels through the hands.

Itโ€™s why some food feels like a hug, why a bowl of soup can soften your mood, why bread made by someone who cares tastes different.

The hands are messengers.
They carry the invisible.

When I cook, I donโ€™t aim for perfection.( though, I am a perfectionist -nothing wrong with that)
I aim for presence.
For care. For stillness. For feeling.

Thatโ€™s what you taste โ€” even if you donโ€™t know it.
