It’s often hard to think what to have as a healthy snack. These nuts are great - protein, “good” fat and easy to prepare.
Put cashew nuts in a bowl and drizzle over some honey. Mix so each cashew is coated then place on one half of a baking tray.
Place pecans on the other side of the tray and sprinkle with a little sea salt.
Bake in low oven (150C) for approx 10 minutes till they all look cooked but not burned.
If the cashews have stuck together, separate now and place on kitchen paper to cool.
Delicious served with Prosecco on a warm summer’s evening.
