The big debate! Which oils are best to cook with and at what heat? 🍽

The first thing to say is that we don't cook with any seed oils in our house (will go into that more another week) but that leaves a plethora of other oils to choose from when cooking.

Do you remember when everyone said to avoid using extra virgin olive oil when cooking at high heat?

Well, it looks like it's back on the high favourites heat menu and there is evidence to back it up. This study looking into the smoke point debate concludes that the smoke point is 'not a reliable indicator of cooking oil stability.'

The study heated several common oils including extra virgin olive oil (EVOO) to 240°C and then held the oils at 180°C for 6 hours,..they concluded:

"EVOO yielded low levels of (unhealthy) polar compounds and oxidative by-products (compared with other oils). EVOO's fatty acid profile and natural antioxidant content allowed the oil to remain stable when heated (unlike oils with high levels of polyunsaturated fats [PUFAs] which degraded more readily)."

It's an interesting read as it compares all the oils as they are heated.

In case you were wondering, our firm favourites are extra virgin olive oil for most things, coconut oil for anything Indian or Asian-inspired butter for lower heat and anything to do with eggs.
