High Protein Choc & Vanilla Pudding
(3-4 servings)

Sooooo good and with 20g protein per serving it makes for a perfect protein topper upper - also high in fibre and low in sugar. Be warned that the chicory fibre syrup may not be your friend if you have a sensitive tummy, think πŸ’¨πŸ˜Š but you can sub in your choice of sweetener. You can batch these and they will keep in the fridge for around three days. Don’t be put off by the tofu πŸ₯°

🍫 Chocolate Mousse Layer

Blend until super smooth:

1. Block of silken tofu approx 300g
2. 40g cacao powder
3. 1-2 tbsp Chicory Syrup
4. 2 tbsp milk of your choice
5. Pinch of salt
6. 25g Chocolate protein powder

🍫Choc Chia Layer

Combine and stir really well. Leave to set in fridge and layer over the chocolate mousse layer.

1. 1 cup unsweetened almond milk
2. 3 tbsp chia seeds
3. 1-2 tbsp Chicory Syrup
4. 1 tbsp cacao powder
5. Pinch of salt

🍦Vanilla Chia Layer

As above but replace cacao with a few vanilla drops or a blob of vanilla paste. Layer over the chocolate chia layer.

Top with a little crunchy almond nut butter, frozen raspberries and salt flakes.

Warming and full of anti-inflammatory nutrients. Perfect with either shop bought stock and red Thai paste or your own homemade offerings - this really is something you can pull together in a few minutes with a some simple store cupboard ingredients:

Coconut milk + red Thai paste + bone broth/stock + protein + favourite veg + favourite noodles

Here I used leftover roast chicken but for a meat-free option I also love it with hardboiled eggs cut in half or tofu chunks crisped up in Chinese five spice

Lots of bone brothing / stock making over here to help nourish soft tissues. I use a slow cooker but it is a lengthy process - the Instant Pots make the job a whole lot quicker. Just not sure I will get approval for another kitchen device. Lots of ways to use the broth - warmed and sipped; used to cook starches in or used as the base for a soup. For a quick lunch, I like to add miso paste to mine along with shredded greens and some eggs or leftover chicken πŸ‘Œ

Tiramisu Protein Puddings - YUM - excited to try these in the morning.

β˜•οΈ180g Greek Yoghurt (full fat or 0% both work)
β˜•οΈ 1 shot coffee
β˜•οΈ 100ml milk of choice
β˜•οΈ scoop of collagen powder
β˜•οΈ 45g chia seeds
β˜•οΈ 30g Vanilla Protein Powder
β˜•οΈ 1tbsp milled flax
β˜•οΈ 1-2 tbsp maple
β˜•οΈ 1tsp cacao powder

Combine everything together (besides the cacao powder), giving it all a good stir. Divide between two glass jars and top with cacao powder. Leave in the fridge to set overnight.

Each serving has 30g of protein and 12g of fibre.

Definitely porridge weather 😍 I soak the chia and oats overnight for a speedier cooking time. Also add in organic egg whites for a protein boost, along with vanilla whey and some almond butter. This bumps the protein up to 30g which can help to keep you satisfied until lunchtime and reduce evening cravings

Blueberry & Almond Protein Pancakes

Perfect little pancakes for the weekend - also keep well as breakfast prep for busier mornings.

Whizz everything together besides the frozen fruit, stir the berries in once everything is well combined. Cook in hot butter/olive oil.

πŸ₯ž175g Wholemeal SR Flour
πŸ₯ž1 tsp Baking Powder
πŸ₯ž25g Xylitol
πŸ₯ž2 Eggs - beaten
πŸ₯ž225ml Water wizzed with 1tbsp Almond Butter
πŸ₯ž1 Banana - mashed
πŸ₯ž Handful Frozen Blueberries

Choc & Hazelnut Flapjacks

Filling and indulgent, this is a perfect fridge filler to have ready and waiting when you need a sweet bite; some pre/post exercise fuel or after school snacks.

Add the following to a saucepan and bring to a simmer, mix well:

🍫125g melted butter
🍫2tbsp maple, agave or honey
🍫100g coconut sugar
🍫2-3 tbsp cacao powder
🍫75ml water or milk

Once simmering, pour the mixture over 350g oats and mix well.

Stir in 100g crunchy hazelnut butter or a handful or chopped roasted hazelnuts - or your choice of nut/nut butter.

Press the mix into a parchment lined baking tin (approx 20cm) and top with 50g grated dark chocolate and salt flakes.

Bake at 180c for 20-25m. Cool and slice.

High Protein Chocolate Breakfast Bowl

This could not be easier to make and ticks so many nutrition boxes. I promise it would satisfy even the most hardened chocoholic πŸ₯°. It’s speedy to prep and can be made in batches (glass jars for on-the-go); it’s high in protein and fibre, tastes Nutella-esque, has lots of crunch and is full of hormone balancing and brain boosting goodness. Just what many of us need to help level up ahead of The Big Return.

Add everything to a bowl or glass jar and give a good stir/shake.

🍫Almond Milk
🍫2tbsp Chia Seeds
🍫1tbsp Milled Flaxseeds
🍫1tsp Cacao Nibs
🍫1tsp Cacao Powder
🍫1/2tsp Maca
🍫1tsp Hazelnut Butter
