After school clubs restarted this week and we kicked off with this delicious cheese & leek herby bread- basically a lovely giant savoury scone, perfect for dunking into soup or on its own with some butter 🀀
This is one I made from leftover ingredients so I didn’t use scales, but just crumble a generous amount of butter into self raising flour, add a tsp of baking powder, salt & pepper, grated cheddar, grated Parmesan (optional) and some cooked down leeks, then bring together with a little milk and knead until it just comes together (don’t over knead or it will go hard). This one took about 40 minutes on the baking setting in the air fryer, first 25 minutes at 180C then last 15 minutes at 150C.

I have been seeing this recipe for a gluten-free spanakopita popping up here and there and wanted to try it, and I can confirm that it’s πŸ’₯ πŸ’₯ πŸ’₯
You basically make a filling the same way you would normally, with spinach (I used frozen), seasoned with salt and pepper and garlic and cooked down until all the water has evaporated, and crumbled feta.
Then instead of using filo pastry, you just dip three sheets of rice paper into beaten egg and lay them down on a clean tray, slightly overlapping so they form one long sheet. Add your filling, roll and coil into a snake. I baked it in the air fryer for 20 minutes at 180C.
DELICIOUS and couldn’t tell at all it wasn’t filo.

Had a lovely afternoon today with learning about the history of Canary Wharf. Our guide Stefan took us on a very exhaustive two hours tour around the area, which included exploring its links with the transatlantic slave trade and the realities of modern homelessness. Unseen Tours is a brilliant social enterprise that employs formerly homeless people as tour guides and reinvests all the profits into homelessness support services. The tour was informative, interesting and a little bit different and they cover lots of different areas of London. Highly recommend!

More summer inspiration:
My favourite kind of bouquet- I found an amazing local Italian grower who delivered all kind of wonders to my door this morning, all grown in his allotment- my heart is happy 🫢🏼 he will never be rid of me now πŸ˜‚
Also found the perfect apricots at the perfect maturation point, which only happens about once a year- beautiful with pan-fried halloumi, fresh mint and a touch of balsamic. And of course my beloved air fryer semi-dried tomatoes πŸ… yum yum πŸ˜‹

Summer dinners ✨
I have been wanting to try plant-based fried β€œchicken” using cluster oyster mushrooms and my goodness, they did not disappoint. Absolutely amazing 🀩

A homage to Nigerian red stew πŸ‡³πŸ‡¬ πŸ›
This one is a labour of love, started this morning with seasoning the meat (a step I should have really done last night), then searing it, frying the onions separately with all the spices, ginger and garlic, then blitzing together peppers, tomatoes, spring onions, more seasoning and adding everything to a slow cooker for a good six hours. Not many things come close 😍
P.s. this is mutton from , but beef or chicken will also work great.

I normally cut the courgettes into rounds not too thick, brush with olive oil and salt and bake them until lightly brown and soft. Then layer with a simple tomato sauce, Parmesan and maybe a bit of mozzarella and jn the oven at 180C for 25 minutes. It’s best to let it sit for half an hour before tucking in with some crusty bread or a nice salad on the side. 10/10, highly recommend πŸ˜‰

Giving my favourite food a little photo shoot πŸ…πŸ˜ In summer, I really don’t need much more than beautiful, delicious tomatoes, a ton of basil and some simple seasonings. A bit of burrata on top doesn’t hurt either 😜
If you want to really elevate your caprese, try peeling your tomatoes: make a cross incision at the bottom and submerge them in hot water from the kettle for about 10 minutes, then drain, peel and slice. Not only will they be silky and smooth, the hot water also takes the chill out of them, giving you the illusion of eating sun-warmed, just picked tomatoes πŸ˜‰ Season with a generous crack of salt (salt always first), a drizzle of good olive oil, a splash of red wine vinegar (controversial but I like it), and lots of fresh basil. Perfection πŸ‘ŒπŸ½
