Fresh and flavourful, this is a protein-rich salad.

๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€:
100g (3ยฝ oz) cooked wild salmon
80g (2ยพ oz) cooked chickpeas
1 handful rocket (arugula) + extra for serving
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp pumpkin seeds
ยฝ garlic clove
1 tsp nutritional yeast (optional)
1 handful leafy greens (e.g., spinach, watercress, or mixed leaves)
6โ€“8 cherry tomatoes, halved

1. Blend rocket, olive oil, lemon juice, garlic, pumpkin seeds, and nutritional
yeast to make pesto.
2. Toss salmon and chickpeas with the pesto.
3. Serve on a bed of leafy greens.
