How I’d cook roast potatoes as a nutritionist 🥔✨

I love roast potatoes because they show that healthy eating doesn’t have to be boring or restrictive. Enjoying food matters. When meals are comforting and delicious, people are more likely to eat well consistently. Roast potatoes remind me that good nutrition is about balance, enjoyment, and respecting food for both how it nourishes us and how it makes us feel.

It’s true that refined carbs (like sugary snacks, white bread, and pastries) can contribute to weight gain and blood sugar spikes if eaten in excess, but that doesn’t mean all carbs are “useless.” The key is choosing the right types of carbs and eating them in appropriate amounts, rather than avoiding them entirely 💗

✨Mediterranean-Style Stuffed Vegetables✨

Perimenopause can make weight creep on more easily, but you can enjoy carbs, just the right kind. Think slow-release, fibre-rich carbs that balance blood sugar and support hormones.

Halve red peppers, courgettes, aubergines, and tomatoes. Drizzle with olive oil, season, and roast at 180°C until soft and golden.

Sauté onions, then mix in Puy lentils with spelt or 5 Glorious Grains for a quick option. Add roasted cherry tomatoesand a handful of rocket for greens. Layer in as many herbs and spices as you like — I call it Plant Power for gut health and reduced inflammation.

I sautéed paneer, but tofu, feta, or shredded chicken all work beautifully.

Finish with pistachios for crunch and fresh coriander for brightness.

💡 Tip: You can also serve the farce on its own as a hearty, protein-packed salad.
