in Mainz, Germany is where business and pleasure sit side by side, serving German quality produce with a laidback, modern attitude.

As part of this project, this is how we saw the three F&B spaces:

The Restaurant - for breakfast, lunch and dinner, blending tradition and surprise, and executed in an effortlessly cool way. Elegant snacks, hearty mains and delicate desserts are paired with wines from leading German winemakers, both well known and undiscovered.

The Bar - the beating heart of the hotel and the neighbourhood’s living room, featuring an impressive gin collection inspired by Otto Brunfels’ devotion to all things botanical.

The Courtyard - an escapist and dynamic corner of the city, infused with all-day laid back magic and brought to life with weekend DJ sets.

A moment for Maximalist Menus 🚀
Blurring the line between print and performance, they turn the simple act of choosing a dish into a moment of theatre.

Scented stock, UV secrets, pop-up surprises… these tactile creations aren’t just read, they demand to be touched, turned, shown off, and talked about long after the meal ends….

Some examples we love:
🍸 : a pop-up cocktail menu engineered by Helen Friel and illustrated by Joe Wilson, unfolding like a tiny stage

🔦 , Athens: a seemingly blank menu that only appeared under a UV pen. A little magic trick before the cocktails arrive

🪡 : ethereal menus printed on silk and fabric which delight the senses

🌼 , Peru: handmade papers embedded with seeds, flowers, and pigments, turning pairing menus and souvenir booklets into miniature landscapes of Peru’s biodiversity

Wine season is officially here 🍷, but what we’re pouring is looking a little different...

Palates are shifting towards lighter, fresher, brighter styles. Think electric whites with razor sharp acidity, rosés that are designed for drinking year round, and reds best served cool.

Alcohol by volume is mellowing too. Wines under 12% are increasingly sought after, with boundary pushing brands like (at 5%) rewriting the rules.

Chillable reds are having their moment; Gamay, Zweigelt, Frappato and cool climate Pinot Noirs are championing fresh, fruit forward juiciness and drink-me-now appeal over heavy tannins and stained lips.

Then there’s ‘destination wines’, the ones that reel you in with their charming story, sense of place, iconic winemaker or cult vineyard status. These labels are turning casual drinkers into intrigued collectors.

And from home shores, Britain now boasts 238 registered wineries supporting our desires for local, low milage, cool climate appeal.

It influences how we perceive flavour and quality, connecting us to a chef’s vision before the first bite.

From silk scarves to collectable pyjamas, hospitality brands are turning their merch into lifestyle statements.

The concept may not be entirely brand new, but it’s taking over our socials and media articles as we see more and more iconic hotel logos embroidered on oversized tote bags or cool minimalist caps.

You no longer need to check into or to wear its cult tee, or stay at to get their collab silk scarf, and x pyjamas and beach tote all tell the story of travel, enabling belonging without saying a word

Looking back on our journey with , we set out to create a range of culinary experiences that felt unmistakably Jumeirah, yet fresh and bold.

After all, this property had famously embraced innovation, and its dining spaces were no exception.

The Fore is a clever 4-in-1 dining space; immaculately executed breakfast operation by day, and four distinct dinner concepts by night:

🍜 - An elevated Izakaya experience that’s lively and fiery, rooted in ramen and Robata, with an intimate nightly Omakase.

🍛 .dubai , by Chef Manav Tuli - A graceful journey through heritage Bombay cuisine, with authentically bold flavours and a subtle nod to Victorian opulence.

🌸 .dubai - A sun-drenched beauty reminiscent of the 1980s Côte d’Azur, where light Mediterranean influences, from Portugal to Italy, interplay with French joie de vivre, and seafood and spritzes gently flow.

🥢 .dubai - A sophisticated sister to the three concepts, buzzing with energy and tempting all with luxurious takes on East Asian dishes made for sharing.

Once upon a time, every brand had a face - a “lucky charm” (from the French mascotte). From pizzerias to café windows, characters helped people feel something.

And there’s science behind it: mascots make brands more memorable, more relatable, and more human.

Then came the age of minimalism. Kitsch characters were out, sleek wordmarks were in. But lately? They’re everywhere.
