Research shows that the body isn’t able to process refined sugars, and actually uses up vital vitamins and minerals when trying to do so. Continuous consumption of sugar can cause us to age faster and is associated with a range of health issues. Over the last two decades, our eating habits and awareness of the benefits and health potential of certain food types has changed enormously. We have move

d towards foods with a purpose, foods that have positive benefits for the body in addition to giving us energy. I have a sweet tooth and I created The Conscientious Cook in response to my own personal quest for nutrient-rich yet appetising sweet treats. It all began in my kitchen where I started experimenting with alternative ways to sweeten foods. Rice malt syrup, raw honey, date syrup and maple syrup quickly became my star ingredients, giving the sweetness I wanted, while delivering valuable nutrients to the body. I have used natural ingredients to create a range of cakes, snacks and treats - extensively taste-tested on my friends and family - which are both delicious and virtuous. Each guilt-free recipe uses the best ingredients in their most natural state. We avoid all refined ingredients, especially sugar, replacing them with seasonal, organic food, ancient grains, raw and super foods that all have amazing and beneficial effects on the mind and body. My chosen selection, some of which are inspired by classic recipes and some of which are my favourites all have delicious healthy ingredients that are valuable to your body. They have a positive nutritional benefit, not empty-calorie quick fixes that actually deplete your energy resources and can be detrimental to overall health. Perfect for dinner parties, lunch boxes, tea-time snacks and sugar high-free children’s birthdays, most freeze well, many are portable for a nutritious snack on the go and all are scrumptious and good for you.

Some days you just want a Snickers… but make it nourishing. 🍫🥜

These no-bake Date, Peanut Butter & Cacao Bites are my little deconstructed Snickers moment — caramel-like dates, creamy peanut butter, crunchy nuts and rich chocolatey cacao. Sweet, satisfying and made entirely from wholesome ingredients.

For this batch I used Raw Cacao & Collagen, which adds a beautiful deep cacao flavour alongside a boost of collagen to support skin, joints and connective tissue. But don’t worry if you don’t have it — raw cacao powder and your usual collagen powder work just as well.

They take minutes to blitz together, require no baking, and keep perfectly in the fridge for when you need a little energy lift, post-walk snack or something sweet after supper.

My favourite breakfast ↓🫐

Creamy, vibrant and packed with antioxidants, this overnight chia pot is one of the easiest ways to nourish your body first thing in the morning.

Loaded with chia, flax and pumpkin seeds for fibre and omega-3s, plus black raspberry and bilberry powders rich in anthocyanins, it’s a bowl designed to support gut health, energy and cellular protection.

🍫 Fudgy No-Bake Walnut Brownies ⬇️

Rich, chocolatey, and deeply satisfying, these no-bake brownies are made with just a handful of whole ingredients.

Naturally sweetened with Medjool dates and packed with walnuts and cocoa, they deliver a delicious dose of polyphenols, fibre, and healthy fats to nourish both body and brain.

✨ Why they’re so good for you
• Walnuts – rich in omega-3 fats that support brain and heart health
• Cocoa – abundant in polyphenols that help combat oxidative stress
• Dates – provide natural sweetness along with fibre and minerals
• Flaxseed – adds plant-based omega-3s and supports digestion

No baking required. Just blend, press, chill, and slice.

Quick Recipe (16 squares)
Ingredients
• 2 cups walnuts, soaked 4–6 hours
• 1½ cups Medjool dates, pitted
• 3 tbsp ground flaxseed
• ¼ cup + 2 tbsp unsweetened cocoa powder
• ¼ tsp sea salt (+ extra for garnish)

Method
1️⃣ Line an 8-inch square tin with parchment.
2️⃣ Drain walnuts well and place in a food processor with dates, flaxseed, cocoa, and salt.
3️⃣ Pulse, then blend until finely ground and forming a soft dough (don’t overprocess).
4️⃣ Press evenly into the lined tin and sprinkle with sea salt.
5️⃣ Freeze for 1–2 hours, then slice into squares.
Store in the freezer and enjoy straight from there for the perfect fudgy texture.

The sun is shining, the days are getting longer, and nature is giving us some seriously delicious, nutrient-packed produce to enjoy!

Eating seasonally isn’t just good for the planet it’s great for our gut, energy, and overall well-being too.

Here’s what’s fresh this month and how it can nourish us:

🥦 Veggies: Purple sprouting broccoli, kale, spring greens, wild garlic, radishes, spinach, leeks, and the last of the winter roots. Packed with antioxidants, fibre, and immune-boosting goodness to help us shake off winter.

🍏 Fruit: Rhubarb is in its prime! Its tartness is amazing in compotes, crumbles, or even blended into a gut-friendly smoothie. Rich in polyphenols to support digestion and reduce inflammation.

🐟 Fish & Seafood: Lemon sole, mussels, clams, and plaice are all at their best—full of omega-3s to support brain health, joints, and mood.

March is all about light, fresh flavours and supporting our bodies as we transition into spring.

SAVOURY BRUNCH RECIPE ⬇️

A Dutch baby is like a cross between a pancake and a Yorkshire pudding — light, puffed, and utterly moreish 🥞✨

I spotted this beauty in Ocado Life magazine and had to recreate it, adapting it slightly to up the servings, I only had dill in the fridge and to make it gluten-free.

This dill-flecked Dutch baby is perfect for a slow weekend breakfast, a relaxed brunch, or a light lunch with a crisp green salad.

Finished with wild smoked salmon, crème fraîche, capers, and a squeeze of lemon, simple, nourishing, and quietly elegant.
