🌿✨ Thankful Thursday Reflections ✨🌿

Today I’m pausing to feel thankful — not just in thought, but in heart. 💛

Dr. David R. Hamilton, PhD, reminds us that gratitude, kindness & compassion don’t just feel good — they do good. They help calm the nervous system, support healthy blood pressure, and nurture the heart’s natural rhythm. 💓

So here’s a simple practice for today:
☕ Make yourself a warm drink.
🌸 Hold it gently.
🍃 Breathe in its aroma.
💫 Feel the warmth and savour each sip.

As you do, think of someone or something you’re grateful for. Let that appreciation spread through you like sunshine in your chest. 🌞

This week I’m also thankful for a little foraging find — a beautiful Polypore mushroom (affectionately known as “Polly Paul”). I’ll be making it into a nourishing tea soon. Like Chaga, it’s rich in antioxidants and heart-supporting goodness — another reminder of how nature provides what we need. 🍄

🌰 Sweet Chestnut Magic! 🌰

Just had to treat myself on Monday morning — vegan pancakes made with my very own sweet chestnut flour (well… halfway there, still plenty to process! 😅).

It’s been quite the labour of love this past week, gathering all these chestnuts from my back garden, peeling, drying, grinding — and I’m still not finished! But oh, it’s so worth it. 💪✨

Today’s pancakes were made with a 50/50 blend of sweet chestnut and spelt flour, plus one banana — simple, wholesome, and absolutely delicious. 🍌🥞

Sweet chestnuts aren’t just tasty — they’re full of goodness!
They’re rich in vitamin C, B vitamins (including B6, thiamine, and folate), and minerals like potassium, magnesium, calcium, iron, copper, sodium, and phosphorus. A true gift from nature for energy, grounding, and nourishment. 🌳💚

This has definitely been a labour of love from tree to table — and I’ll be savouring every bite.
