High protein cookie dough bark 🍪

INGREDIENTS:
55g almond flour
75g Salted Caramel Soy Protein Powder
65g Triple Nut Butter
80g Sugar Free Maple Syrup
1/2 tsp vanilla extract
5tbsp almond milk
150g dark chocolate chips
100g dark chocolate
2 tsp coconut oil

METHOD:
1. Mix together the almond flour, protein powder, nut butter, maple syrup, vanilla, chocolate chips and almond milk.
2. Press this mixture out onto a parchment lined baking sheet into a thin layer.
3. Melt the dark chocolate with the coconut oil.
4. Pour over top of the cookie dough layer, and spread almost to the edges.
5. Refrigerate at least 4 hours or freeze for at least 2 hours.
6. Break into even-ish sized pieces and enjoy!

Elevate your plant-based protein game with this delicious Sticky Soy Protein Tofu
RECIPE BELOW 👇

Ingredients (2 servings):

Sauce:
1 tsp ginger paste (minced fresh ginger, about half a thumb)
1 tsp garlic paste (2 minced garlic cloves)
4 tsp brown sugar
2 tbsp sesame oil
5 tbsp light sesame sauce
Juice of one lemon
½ tsp cornflour

250g cooked rice
1 block firm tofu
2 tbsp cornflour
Cooked tenderstem broccoli
H**p Seeds
Sesame oil for frying
Black sesame seeds
Fresh coriander

Method:
1. Wrap the tofu in a paper towel or clean dish towel and place something heavy on top. Allow it to sit for 15 minutes to remove excess moisture. Then drain the tofu and cut it into ½-inch thick rectangles. Place the cubes in a bowl, add cornflour and toss to coat
2. Whisk together the sauce ingredients, setting aside until ready to use
3. Heat 2 tablespoons sesame oil in a large non-stick pan over medium heat. Add the tofu to the pan and cook for 3-5 minutes on one side until crispy. Flip the tofu pieces and cook until crispy on the other side
4. Towards the end of crisping the tofu, pour the prepared sauce over the top and let simmer for about 5 minutes until it thickens. Stir well to evenly coat the tofu
5. Assemble the bowls with cooked rice at the bottom, cooked tenderstem broccoli and glazed tofu. Top with H**p Seeds, black sesame seeds, and fresh coriander
