                                            Thought id share what my cover post is... 
I had a glut of beautiful tomatoes, courgettes and spring onions in my fridge. 
So I rough chopped them with salt and black pepper. Crushed garlic, olive oil spritz, chopped thyme and parsley. 
What youre left with is a beautifully scented and flavoured med veg mush. 
Mix it into pasta, blitz into soup, finely chop into couscous. 
No food waste. Healthy happy tummy!
