PANCAKE DAY πŸ₯ž

Not long now!

Here’s my recipe for grain free pancakes πŸ₯ž

Loaded with good fats and protein along with blood sugar balancing cinnamon, antioxidant rich raspberries and magnesium bursting dark chocolate 🍫

Ingredients
100ml milk
1 tsp baking powder
100g ground almonds
1 tsp cinnamon
1 egg

Method
Mix dry ingredients together then add milk and egg.

Fry off on small batches in an oiled frying pan or a griddle.

I defrosted half a cup of frozen raspberries and added some vanilla to my live yogurt and melted some 74% dark chocolate to drizzle over.

This will keep me full for hours πŸ˜‹

Pembrokeshire County Show Food Story πŸ§‘β€πŸŒΎ 🚜 πŸ₯•
An annual event highlighting the importance of Farm to Fork 🍴 which is SO important for our children to understand.

We peeled and chopped vegetables and children tasted our homemade soup using amazing Pembrokeshire produce.

We made 48 litres of soup πŸ₯£ and met around 590 children πŸ§’ who had the best time !

Amazing to be part of this event and to see such community spirit.

Please πŸ™ get to a farmers market, order a local veg box, try milk from a farm vending machine πŸ€— So much local produce available to us here in Pembrokeshire - support it if you can πŸ’–

A new study of 32,000+ women found citrus helps support mood through the gut-brain connection. πŸŠπŸ‹

Women with the highest citrus intake had a 22% lower risk of depression compared to those who ate the least. But the researchers didn’t stop there, they also discovered how this works.

Citrus fruits (like oranges and grapefruit) increase the abundance of a key gut microbe called Faecalibacterium prausnitzii. This microbe produces compounds that enhance serotonin and dopamine availability in the gut: two neurotransmitters essential for emotional well-being.

In fact, F. prausnitzii was consistently lower in people with depression, across two independent cohorts. And the more citrus people consumed, the more this microbe thrived.

What you eat feeds the bacteria that shape your thoughts, feelings, and resilience.
