Pork Schnitzel And Apple Salad
Ingredients
- 1 cup breadcrumbs or Panko
- 1/2 Tablespoon Cornflour
- 1 Egg, lightly beaten
- 2 Green Apple, cored, halved and thinly sliced
- Some Mayonnaise
- 1/3 cup Olive Oil
- 1 Packet Ready-to-serve Salad Green with dressing
- 4 Pork Sirloin Steaks, fat trimmed
- Some Wholegrain/Creamy Mustard Sauce
- 1/2 Tablespoon Cooking Wine

Preparation
Using a meat mallet, pound pork slices evenly to 5mm thick. Marinate it with cornflour, cooking wine and lightly beaten egg for about 3 - 5 minutes.

Coat marinated pork slices evenly with breadcrumbs by pressing the meat down against the crumbs.

Heat oil in a frying pan on medium heat, cook pork schnitzel for 3 minutes on each side or until golden and cooked through.

Drain well on paper towels.

Meanwhile, toss the pre-packed salad with accompany dressing before transferring them to a serving plate and top with apple slices. (you can soak apple slices with some lightly salted water to prevent it from oxidized and turns brown)

Next thickly slice pork and arrange on salad and drizzle mustard dressing over pork and serve.

Apple-Cheesecake Tart with Salted Caramel Glaze
Ingredients
- 1 teaspoon butter
- 2 tablespoons double cream
- 1 large egg, lightly beaten
- 1 cup flour
- 2 Granny Smith apples chopped
- 50g ground almonds
- 1/2 teaspoon ground cinnamon
- juice of half a medium lemon
- 225g plain, full-fat cream cheese, softened
- 50g raw sugar
- 1 good pinch sea salt
- 1/2 cup sugar (feel free to use Splenda Baker's Mix... I do and it is just as delicious.

- 1/2 teaspoon vanilla extract

Preparation
Crust: Using a stand mixer or handheld electric whisk, cream the butter, sugar and vanilla together until lightened. By hand, gently mix in the flour and almonds. Press the resulting crumbs into a 25cm loose-bottomed tin (or several smaller ones if you have decided to make individual servings).Custard: Using a stand mixer or handheld electric whisk, cream together the cream cheese and sugar.

Add the egg and vanilla and mix to completely combine.

Pour into the prepared (uncooked) crust.Apples: Slice the apples as thinly as possible - a mandoline is good for this. Toss gently in the sugar, cinnamon and lemon. Leave to soften for 10 minutes or so. Arrange in a layer on top of the custard. Start by laying overlapping apple slices all the way round the edge. Next create the 'rose' - arrange the slices in a spiral, standing the apple slices a little on their edge, until the centre hole is completely filled in. Save the smallest, thinnest pieces for the very centre as they will have to bend the most. Cover the tart with tin foil and bake in a preheated oven set at 190c for 30 minutes (this step helps soften the apples).

Remove the foil and bake for 15-25 minutes longer, until the custard is puffed and the apple edges are lightly browned.Glaze: When you take the tin foil off the apple tart, start making the glaze. Melt the sugar in a small saucepan over medium-high heat and cook until rich and golden.

Add the butter and salt and stir to combine.

Add the cream and continue to cook, stirring constantly, until the ingredients have formed a smooth, unified caramel. When the tart looks nearly ready, remove it from the oven and brush with the glaze. Return to the oven and cook for a further few minutes until the glaze is gently bubbling. Cool to room temperature. Can be kept in the fridge for several days - store in the baking tin and wrap well.

Cacao-Pecan Shortbread Cookies
Ingredients
- 1 1/4 sticks (10 tablespoons) butter
- 1/4 cup finely chopped cacao nibs
- 1/2 cup confectioners' sugar
- 1 large egg, lightly beaten
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 1 cup pecans, coarsely chopped
- 1/2 vanilla bean, split, seeds scraped
- 1 teaspoon pure vanilla extract
- 3 tablespoons vanilla sugar
- 1 tablespoon cold water

Preparation
preheat the oven to 350.set the butter out to soften.spread the chopped pecans on a rimmed baking sheet and toast for about 4-6 minutes, until lightly browned and fragrant. let cool.put the softened butter in a large bowl. beat the butter, confectioners' sugar, vanilla bean seeds, vanilla extract and salt at medium speed until fluffy.add the flour, mixing in 1/2 at a time. beat at low speed until just incorporated. stir in the pecans and cacao nibs. mix well.transfer the dough to a work surface and roll into a 1 1/2-inch-thick log. wrap the log in plastic or parchment paper and refrigerate 1 hour, until chilled.line 2 large baking sheets with parchment paper. spread the vanilla sugar on a platter.mix the egg and water together to create an egg wash. brush the log with the egg wash and roll in the sugar. slice the log into 1/2-inch-thick rounds. place them on the prepared baking sheets, about 1 inch apart.bake the cookies for about 15 minutes, until the edges are golden; rotate the baking sheets from top to bottom and front to back halfway through baking. transfer the cookies to a wire rack and let stand until completely cooled.

Vegan Eggnog
Ingredients
- 1 (48-ounce) container unsweetened almond milk
- 1/2 cup raw unsweetened shredded coconut
- 1/4 cup sliced almonds
- 1/2 cup sugar
- 5 dates, pitted and chopped
- 1 whole vanilla bean
- 2 whole cinnamon sticks
- 1/4-1/2 teaspoon ground nutmeg, plus more for garnish
- 2 teaspoons vanilla extract
- 5 tablespoons dark rum (optional)
- 5 tablespoons dark rum (optional)

Preparation
In a large saucepan, add the almond milk, shredded coconut, sliced almonds, sugar, dates, split vanilla bean and seeds, cinnamon sticks, nutmeg, and vanilla extract.

Place over medium heat and slowly bring to a simmer, whisking occasionally.Once simmering, reduce the heat to low and cook for 20 minutes. Be careful not to boil.Turn off the heat and let steep for 10 minutes.

Remove the vanilla bean and cinnamon sticks and discard.Using a kitchen blender, and working in batches, blend the eggnog on high for about 1 minute. Stain the eggnog through a fine chinois (strainer) into a glass or metal bowl. Using a wooden spoon, gently press the strained solids firmly against the chinois to extract as much liquid and flavor as possible. Dispose of the solids. Repeat this process with the remaining mixture.Chill the strained eggnog for at least 1 hour or more if serving cold

To serve, stir about 1 tablespoon of rum per 1 cup of eggnog. Ladle into serving glasses and garnish with a dash of nutmeg on top. If serving warm, add the rum and enjoy right away.

Holiday Egg Nog
Ingredients
- 1/4 teaspoon of Allspice
- 1/2 teaspoon of Cinnamon
- 4 Egg Yolks
- 1 cup of Heavy Cream
- 2 cups of Milk
- 1/2 teaspoon of Nutmeg
- 1/2 cup of Sugar

Preparation
Add the egg yolks and sugar to your mixer. Whip it up good until the mixture turns a light yellow color.Now, grab your small saucepan and add to it the milk, heavy cream, allspice, nutmeg, and cinnamon.

Heat it up to just boiling and remove it from the heat. Grab about a half a cup of the hot milk and add it into the egg mixture, whisking constantly. Now add the tempered egg mixture back into the rest of your milk mixture, continuing to whisk constantly.

Put the mixture back on medium low heat and cook it until just boiling and thickened.Pop it into a container and set it in the fridge to cool completely.
