Baked Rigatoni
Ingredients
- 14 ounces frozen broccoli flowerets
- 1 teaspoon dried basil
- 1/4 teaspoon fennel seeds
- 26 ounces pasta sauce
- 1 pound rigatoni
- 6 ounces mozzarella cheese, part skim milk shredded
- 14 1/2 ounces canned ready-cut diced tomatoes drained
- 6 ounces frozen vegetable burger crumbles

Preparation
Preheat oven to 400 degrees. Cook pasta according to package directions, drain.

Combine pasta, pasta sauce, tomatoes, broccoli, burger crumbles, basil, fennel seeds and 4 oz. of the mozzarella in a 9x13 baking dish. Top with remaining 2 oz. mozzarella.

Bake until heated through, about 20 minutes.

Ingredients

Baked Italian Nachos put a Mediterranean twist on the classic appetizer with herbs, ricotta, peperoncini, and pasta chips!

You all know I get pretty psyched when my monthly Degustabox arrives. This fun food subscription box always has a great variety of ingredients and snacks. You may have seen my haul when I posted it on Instagram...

My son was very excited about all the yummy goodies. But he was most interested in checking out the pasta chips. Have I mentioned he is a pasta fiend? Oh, and also a chip lover. The idea of pasta chips kinda blew his mind!

I decided to take a classic appetizer—nachos—but put an Italian spin on them. So, instead of Tex-Mex ingredients like salsa, jalapenos, and cilantro...I used Mediterranean ingredients like marinara sauce, peperoncini, and parsley. I also replaced the sour cream with ricotta. And, of course, the pasta chips in place of tortilla chips!

Ingredients

/2 pound of ground beef (or ground turkey or sausage)

/2 yellow or red bell pepper, chopped*

/2 onion, chopped*

/3 cup marinara sauce

cloves garlic, chopped

salt and pepper, to taste

a couple pinches of red pepper flakes

/2 cup shredded mozzarella cheese

bag (5 oz) pasta chips

sliced peperoncini

sliced olives

chopped parsley

ricotta cheese

*reserve a little bit to sprinkle over the cooked nachos

Preheat oven to 350 degrees.

Heat a tablespoon or so of oil in a large skillet over medium heat. Cook the ground beef, stirring and breaking it up, until it is fully browned and no longer pink.

Add the peppers, onions, garlic, and marinara sauce and simmer until the vegetables are tender, about 10 minutes. Season with salt, pepper, and red pepper flakes.

While the meat mixture is simmering, arrange the pasta chips in an oven-safe pan or casserole dish (I used a 12" cast iron skillet). If you want to double the recipe, you can make the nachos on a sheet pan. Arrange the chips in a single layer, with some overlap so there are no bare spots in the pan.

Spoon the hot meat mixture over the pasta chips.

Sprinkle the mozzarella cheese over the chips and meat and place in the preheated oven.

Bake for about 20 minutes, until the cheese is fully melted.

Serve immediately, topped with the reserved chopped onions and peppers, slices of olives and peperoncini, chopped parsley, and a generous dollop of ricotta cheese. These

Baked Penne
Ingredients
- 1 small butternut squash, peeled& seeded
- 1/2 large onion, chopped
- 4 baby portobella mushrooms, chopped
- 12 ounces penne pasta (I used Garden Delight, any would work)
- 1/4 cup tomato paste
- 1 jalapeño pepper, chopped& partially seeded (depends how hot you want it!)
- 1 cup water
- cup nutritional yeast
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 cups kale, chopped

Preparation
Preheat the oven to 400*.

Chop butternut squash into 1" pieces and roast on a baking sheet sprayed with cooking spray until lightly browned, about 30-40 minutes.

Once the squash is done baking, reduce heat to 350*.

Bring a pot of water to a boil and cook pasta according to package directions, using the shortest recommended cooking time.

While pasta is cooking, saute onions and mushrooms.

In a food processor, combine about 1 cup roasted butternut squash cubes, tomato paste, jalapeo, water, nutritional yeast, garlic powder, salt, black pepper, and Italian seasoning until well blended.

Mix with drained pasta, onions, mushrooms and kale.

Spray a 9"x13" pan with cooking spray and pour pasta mixture into pan.

Bake uncovered at 350* for 30 minutes.

Indian-Style Eggs On Toast
Ingredients
- 6 slices Country-style bread
- 4 eggs
- 1/2 onion, sliced finely
- 1 medium tomato, diced
- 1/4 teaspoon turmeric powder
- 1/4 cup fresh coriander leaves, chopped finely
- salt and pepper to taste

Preparation
Toast the bread on both sides in a dry frying pan or under the grill and set aside.

Heat some oil in a frying pan. Saut the onions until caramelised.

Add the tomatoes and cook until they soften.

Sprinkle over the turmeric and continue cooking for another minute.

Break in the eggs and cook until required doneness. Stir in the coriander and salt and pepper to taste.

Top the toasts with an equal amount of egg and serve immediately.

Spinach Salad with Strawberry Vinaigrette
Ingredients
- 1 tbsp. sliced almonds
- 1/4 cup – balsamic vinegar
- 2 oz of chicken – cooked
- 1 1/4 tsp. dijon mustard
- 1/2 oz. feta cheese
- 2 tsp. fresh thyme
- 1/4 tsp. ground pepper
- 1/2 shallot – chopped
- 2 cups fresh spinach leaves
- 2/3 cup strawberries - chopped
- 4 strawberries - sliced
- 1/4 cup water

Preparation
Place everything on a plate! :)

Soba Noodle & Five-Spice Pork Salad
Ingredients
- 150g – 200g Pork tenderloin (about 1/2 pound)
- Oil, enough for pan-frying
- 200g Soba noodles (about 6-8 ounces dried)
- 100g snow or snap peas (about 1 cup)
- 1 Carrot, cut into thin rounds
- Sesame seeds (black & white), for garnish
- Spring onions, finely chopped, for garnish
- 1/2 tablespoon Oyster sauce
- 1/2 tablespoon Five-spice powder
- 1/2 tablespoon Sesame oil
- 1 tablespoon Soya sauce
- 1 tablespoon Sugar
- White pepper, a dash
- 3 Garlic cloves (crushed)
- 1-2 centimeter piece of fresh Ginger (crushed) (about 1/2 - 1 inch)
- 1 Red chili (crushed)
- 3 -4 tablespoons Sesame oil
- 2 tablespoons Soya sauce

Preparation
Cut the pork tenderloin into 2-3 cm thick (about 3/4 inch). Put oyster sauce, five-spice powder, sesame oil, soya sauce, sugar, white pepper, garlic, ginger, and red chili in a bowl and mix with pork. Marinate for 1-2 hours or more.

Trim the snow peas and cut the carrot into thin rounds. Blanch them, refresh in cold water, and set aside.

Boil a pot of water. Cook the soba noodles according to the packet. Once cooked, drain, and refresh in cold water.

Heat a pan, drizzle with some oil. Pan fry the marinated sliced pork for about 15 20 minutes or until each side is golden brown or caramalised.

In a bowl, mix soba noodle, the snap peas, and carrots.

Drizzle some sesame dressings and mix. Then, top a few pieces of five-spice pork to serve.

Garnish with sesame seeds and finely chopped spring onions.

Alternatively, you can make a simple teriyaki sauce (1 tbsp sake, 4 tbsp soya sauce, 4-5 tbsp mirin, 2 tbsp sugar) and drizzle over the salad.

The human heart beats around 100,000 times a day, which sounds heroic until you realise other animals are out there absolutely showing us up. Your heart is basically doing a full‑time job with unpaid overtime, quietly thumping away while you scroll on your phone. Meanwhile, a hummingbird’s heart is beating so fast — over 1,200 times per minute — it’s basically running a tiny internal rave. On the other end of the spectrum, a blue whale’s heart beats about once every six seconds, which means it’s chilling harder than any creature on Earth. And then there’s your dog, whose heart beats faster than yours and whose nose can detect tens of thousands more smells, so they’re out here living life like a hyperactive detective with a built‑in radar system. Noodle Kugel with Pineapple-Gluten free, Dairy Free
Ingredients
- 1 16 ounce package spiral gluten free rice pasta
- 1 can pineapple chunks, drained
- 1 1/2 cups vanilla coconut milk or unsweetened (I use So Delicious brand)
- 1/2 cup coconut creamer (I use So Delicious brand)
- 4 tablespoons sunflower oil
- 10 egg yolks, beaten
- 1/8 cup xylitol (I use Epic Dental brand, sold online) - use sugar if not available
- 1/8 cup evaporated cane sugar
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 tablespoons kosher salt, boiling pasta
- 24 cupcake liners
- 1 teaspoon cinnamon
- 2 tablespoons evaporated cane sugar
- 1/2 tablespoon Earth Balance Soy Free Margarine
- 1/2 brown rice flour (I use Bob's Red Mill)

Preparation
Preheat the oven temperature to 350 degrees F

Fill a medium stockpot with water set over high heat. When water boils add 2 tablespoons kosher salt, then add pasta, stir well to prevent sticking.

Stir occasionally, cook for 8-10 minutes.

Let it sit in the water for a few minutes before transferring to a large glass, or heatproof bowl.

Meanwhile prepare other ingredients.

Pasta should cool off a bit during your preparation of the other ingredients.

Add coconut milk, creamer, pineapple, sugar, xylitol, cinnamon, nutmeg, oil, combine well.

Add egg yolks, stir to combine well.

Prepare the crumble.

Line 2 cupcake pans with cupcake liners.

Add noodle mixture into the cupcake liners with a dry 1/4 cup measuring spoon, filling it over the top.

Add any remaining liquid to each kugel that may look dry.

With your fingers, sprinkle crumble over each (about 1/2 teaspoon for each).

Bake for 40-45 minutes.

Cool for 10 minutes before removing from cupcake pans.

Remove liners before serving if you like.

Serve hot or warm.
