Love this guy - what a treat - Leif Vollebekk I’ve literally had him on repeat play and his lyrics and beautiful music has carried through the last couple of years.

Miso Soup Gyoza 🥟 Breakfast Bowl

I’ve always been an early riser and I love watching the sunrise over the with my cocker spaniel Cassey and this morning’s sunrise was a magical one - full of the promise of spring!

I’m on a mission to swim 250km over the course of 2024 - sorry it’s not going to be in the sea!!! I’m a non nonsense pool swimmer me! 🏊‍♀️

After my 2km swim this morning I hit my 50km by end of March target 😂⭐️ and was so hungry when I got home 🏡 I needed food - fast, and I wanted it to be healthy and warming - nothing is quicker than miso soup!! Here’s the recipe…

Put 4 chicken gyoza 🥟 on to cook
Thinly slice
4 salad onion
1/2 yellow pepper
1 small carrot

Then is a separate pan fry slowly fry the veg with a handful of tiny broccoli 🥦 florets until just cooked

Add in 1 heaped teaspoon of organic white miso

Add about 350ml hot water and bring to a gentle simmer

By now your gyoza should be perfectly cooked

Pour your miso soup into a bowl and place the cooked gyoza 🥟 on top

Season with toasted sesame oil and chilli flakes

Simply delicious 🤤

Yay it’s Friday at last and what a week it’s been! Getting very close to a product launch now. Only a few more weeks before the big reveal - drum roll at the ready please!!!

After what seems like months of rainy muddy dog walks, dark evenings and gloomy mornings today our daylight stats improve which is good news for our circadian rhythm and mood as from today right through to November the sun now sets after 6pm. Phew!

Can’t wait to get back to my favourite sandy beech for some Friday shenanigans and a proper sea swim 🏊 if I can brave it!

Anyways - happy Friday beautiful people hope you have a fabulous weekend come rain ☔️ or shine 🌞

I know loads of us will be reflecting back over the last year and lots of you will have loads of achievements to list and celebrate and that’s what I would normally be doing…

But this quote just about sums up how my 2023 rolled and I’m just happy that I got through it and that at the end of a very tough year I am just relieved to find myself in a much stronger emotional place than at the beginning of the year and that fills me with hope and gratitude which this year means way more to me than any previous achievements!

I wouldn’t tbe in such a positive space without the love and support of friends and family - you all know who you are - thank you 🙏 so much - it’s all getting easier, thank you for holding me up and helping me along the way

Women supporting women is something that we just do so naturally and magnificently and it’s a beautiful heartwarming experience

2024 - I’m ready for you - show me what you’re made off!! Let’s boogie baby!!
