Breakfast special. Raw oat porrige, chia and lindseeds. Fresh papaya and coconut lemon yogurt. I made the yogurt using the flesh from a fresh coconut, whizzed up with some coconut water and the contents of a high potency probiotic (I recommend Healthy Atom) . Put in a glass jar with a breathable cover and put in a dark place on the kitchen counter. The next day you have yoghurt ! Flavour as you wish. I added some xylitol ( white birch sugar) and lemon juice...delicious !

I have made a raw version of lasagne. I used a large courgette sliced into discs for the pasta layer. I put these and the mushrooms into the dehydrator for a couple of hours to soften them. I made a tomato sauce with fresh basil, onion, garlic, olive oil and seasoning. For the cheese sauce I soaked sunflower seeds overnight, blended them with water and added nutritional yeast flakes to give it a savoury flavour. I layered the "pasta" , sauces with mushrooms, red pepper and yellow peppers. Topped with some sunflower seed cheese which I had dehydrated into "rawmesan". It tasted pretty good ☺

An easy way to open a fresh coconut safely and easily. Use the heel of a knife to crack open the weak point at the top of the coconut. The water is delicious to drink straight or include in all sorts of recipes savoury or sweet. Coconut water is full of electrolytes making it fantastic for rehydration 🙂

Here's the recipe for the Teriyaki Noodles we had today.
I spiralised beetroot, carrot, butternut squash and courgette, but you can use any vegetable and even hard pears and apples. I finely sliced some red cabbage for extra colour and crunch.
Again recipe comes from Ani Phyo "Raw Food Essentials"

3 tablespoons Extra Virgin Olive Oil
1 tablespoon raw cider vinegar
3 tablespoons agave syrup
2 tablespoons Braggs Liquid Aminos or Nama Shoyu
1 teaspoon minced garlic
1 tablespoon grated fresh ginger

4 cups spiralised courgette noodles (4 - 5 courgettes)
