Super simple slow cooker cauliflower and chickpea curry, less than 350 kcal per serving, serves 4, or 2 if you're really hungry, no final image we were hungry and ate it before I could take a picture.
Ingredients: 1x tin of tomatoes or 1x passata
1x tin of chickpeas
1x medium/large cauliflower
1x red pepper
1x brown onion
1x tablespoon of Cumin
1x tablespoon of Paprika
1/2x tablespoon of garlic powder
100ml of water from the tomato tin
Pinch of salt and pepper
Rice/cous cous/quinoa/wraps to accompany it
Method:
Stick it all in the slowcooker and leave it. It'll be done when the cauliflower is soft and the peppers have release some water so its not too dry, if using chopped Toms, add so.e ketchup or tomato puree to add more sauce and liquid.
