This season, why not celebrate the mighty British walnut, a little nut with a big heart. 🌰💚

These ones are fresh from our only UK walnut orchard at Sharpham Park Each walnut tells a story of patience, care, and connection to the land. From tree shaking to shelling, every step of the harvest is a labour of love 🌳🤎

Packed with omega-3s, fibre, and antioxidants, these golden kernels nourish our heart, gut, mind and planet; the perfect autumn snack to savour slowly and value🙏🏾

💡Science shows us that eating walnuts can help to maintain the elasticity of blood vessels - which tends to get less so with age, meaning blood pressure can rise.

✨What’s different about this cheese?

It isn’t organic but interestingly it’s made with milk from farmers who are all at different stages on a journey towards ‘climate-friendly’ farming… also called 🤎Regenerative💚

It’s been brilliant to meet some of the team at First Milk recently🙌 - a British, 🧑‍🌾farmer-owned Dairy co-operative ensuring that Dairy farmers are paid fairly for their milk….

It’s valued for being ‘regenerative’ even though it isn’t certified organic… confused?

Organic certification which we’ve come to recognise and therefore, trust, is a really helpful way of guiding our food choices👍🏻🌎

Regenerative on the other hand isn’t a checklist or a label….yet. 🤔

➡️Instead, it’s a set of guiding (farming) principles: 🌿 keep soil covered, minimise soil disturbance, maintain living roots in the soil, build biodiversity, and integrate grazing animals back into the land. 🤎🌎. The details look different for each farm depending on soil type, typical weather, and landscape. That flexibility is part of its strength as it enables farmers who can’t necessarily afford to switch to to ‘give it a go’

All these nature-positive systems have a shared vision - providing food while restoring nature and therefore moving towards healthier people and planet✨💚🌎

🌱Plant roots - giving structure and helping water retention and drainage
🍄Funghi - mile upon mile allowing trees to communicate and carrying vital nutrients
..and so much more!

Producing our food in harmony with 🌿nature, otherwise known as farming or and including pasture-fed, grass-fed or 'biodynamic' is something we all need to understand more about - with 60% of biodiversity loss worldwide due to our current food and farming system - the change can't come fast enough👍 🌍 🧑‍🌾

📢 Shouting out for our nature-friendly 🐄 farmers today whether certified or on the road to 🙌 It’s a win win from from soil to gut and our climate too👌🤎🌎

Did you know dairy foods from farming systems which work in harmony with nature have a healthier fat profile and often more protein and antioxidant Vit E👌 At the same time their cows restore the soils naturally so they capture more carbon and retain more water 💦 In fact when you consider dairy is made from sunlight, rain and grass with the miracle touch of cows and their gut microbes 😀🤎, it’s pretty miraculous food indeed🌎

Special congratulations to tenant farmer Stuart Rogers at Longmoor Farm in Dorset for being named Carbon Farmer of the year last week by 👌💚🌎🥳 It was brilliant to have Stuart on our panel .alive last week!

What’s not to love as they say?!

Seriously though, our top 6 inches of soil is so vital for people and planetary health (if you haven’t yet seen the fabulous 🇬🇧 film documentary make sure you do!) and it was a privilege to moderate our soil to human panel at Landalive🙌 knowledge-sharing on this brilliant story of our health landscape.

Add salt as you go to really develop the flavours and keep tasting! “Salt makes cooking 3D”😋 Using sea salt brings extra dimensions to flavour (including bringing out sweetness) and keeps extra minerals in (vs bleached table salt) - thank you for so much knowledge-sharing! using sea salt means you can use less salt overall
