So.... Loaf number 6.... In my search for a gluten, dairy, egg, nut, soya free loaf of bread that is not full of emulsifiers and lab based ingredients.
I'm beginning to see why there are not any currently on the market! This is loaf number 6 and another one that unfortunately was confined to the bin! 😞 . With this one I used gluten free strong bread flour and aquafaba (chickpea water) as an egg substitute. It rose so well it came over the top of the bread machine and then burnt onto the heating element!😱😱.
Although it looked one of the best when finished, it was far too dense and not at all appetizing!
I think it might almost be time to call it a day. Although there is an Indian flour called Sorghum flour, that I haven't tried yet. I think I'll have one more attempt next week and maybe dispense with the bread machine, in favour of traditional methods, but then that is defeating the object of this quest , to make a hassle free, allergy free daily loaf of bread 🍞🤔
