Sunset at the allotment tonight. ๐Ÿ™๐Ÿผ

Having spent a lot of the day in front of a screen and on the phone it was lovely to take a walk this evening down to the allotment and enjoy the sunset.

Deep breaths, clean air and the sounds of nature are a fantastic way to destress and reset after a busy day.

Did you know that blackberries have one of the highest antioxidant contents of any food. They are essentially one of the healthiest berries.
So by my reckoning by Friday Iโ€™ll virtually have superpowers ๐Ÿฆธ๐Ÿปโ€โ™€๏ธ๐Ÿ˜‚

Homemade sushi platter. ๐Ÿฑ
This is what happens when you let children decide what they want for lunch. ๐Ÿคฆ๐Ÿผโ€โ™€๏ธ

Several hours and 500 sheets of nori later & we had created our own veggie maki rolls, avocado lettuce boats and teriyaki noodles ๐Ÿœ

Kids had loads of fun and it was a fantastic family meal time experience.

The more children can be involved in choosing and making foods, the more they are willing to try and youโ€™d be surprised how far theyโ€™ll step out of their comfort zones if they have made something themselves.

We know that VARIETY is key when it comes to plant foods and our gut health. We should be aiming to eat at least 30 different varieties of plants each week.

Starting expanding childrenโ€™s repertoire at a young age has huge benefits for their palate as they grow older.

Relatively new foods ours tried were - pickled ginger, edamame, kohlrabi and of course WASABI ๐Ÿคฏ๐Ÿ˜ญ๐Ÿ˜‚

Just checking in after having spent a few weeks recharging the batteries with the family. Putting the phone camera away and just being present has felt very liberating - but it does mean Iโ€™m woefully short of beautiful shots to share with you! ๐Ÿ˜

Family time and social connection is a key pillar of health so take the time to do the same when you can.

Peak District views on a blustery afternoon.

We are so lucky to live just a stoneโ€™s throw away from this stunning landscape (well, an hourโ€™s drive, but close enough).

Spent a few hours exploring Burbage Ridge this afternoon with the family. Not great weather but we got the layers and the waterproofs on and had a fantastic time nonetheless. I always feel so much better after getting out in the fresh air and the kids certainly do better when theyโ€™ve been out. It can be tempting to stay in when the weather isnโ€™t great but I often feel sluggish and the kids almost always get restless and fractious the longer weโ€™re indoors. Fight the cabin fever this summer and take a few walks in the rain to blow off the cobwebs.

We followed it up with a stunning vegan roast dinner at Fox House Pub which was well earned!!

Szechuan tofu & veggie stir fry ๐Ÿœ

Definitely needed to up my veg count after a few days away ๐Ÿšต๐Ÿผ surviving on PB banana bagels (humunuh ๐Ÿ˜‹), about a million and cycling gels.

It was great for quick energy but wreaked havoc with my gut so itโ€™s been good to get back on track with some whole fresh foods since I got back.

You donโ€™t have to be a saint and stay on track with your diet 100% of the time. The important thing is coming back to it again each time and not throwing in the towel if youโ€™ve had some time away or indulged a little.

Absolute blast with these guys over the last 5 days!
Thanks and for an unforgettable tour.

Felt really good to challenge myself. I love the outdoors and cycling but have never done anything of this magnitude before.

125 miles cycling through some serious terrain and 3 mountains climbed in just 3 1/2 days ๐Ÿ˜…

Absolutely could not have achieved it without our super campsite support crew - Jenna, Sarah and of course ๐Ÿฅฐ

And thanks to everyone who sent love, wishes, concerned messages and donations. We were spurred on by every bit of it and have raised over ยฃ1000 (before gift aid and fund matching) and for Framework charity which is far beyond what we ever expected.

So very grateful right now (and very stiff ๐Ÿ˜…).

Welsh Three Peaks update - thanks so much for all your wishes, support and donations guys!

Had no signal in mid Wales so quick update tonight.

Did 30 fairly gruellingly steep miles on the bikes yesterday morning followed by all 893m of Cadair Idris ๐Ÿ˜จ

Decided in view of the need for joint preservation to do the remaining 48 bike miles today and leave the Snowdon summit til tomorrow.

Always good to have a plan B and better to complete the challenge in one piece than overdo the mileage on the final day.

Will hopefully update with a summit shot tomorrow!

Stack of banana and chia pancakes this morning with oat fraiche and strawbs for the littlest P & pancakes with โ€œthree ways nut butterโ€ for the biggest P - ๐Ÿฅž almond butter and agave syrup,
๐Ÿฅž peanut butter, banana, date and cinnamon,
๐Ÿฅž and finally choc-hazelnut butter and dates. ๐Ÿ˜‹

Chinese curry stir fry with tempeh for lunch today ๐Ÿฅข

Kids are all at parties ๐ŸŽˆ this evening which inevitably involves a sea of beige and processed foods, so for lunch we maximised the veggie count with a stir fry.

For this we racked up 8 different vegetables and pretty much all the rainbow colours ๐ŸŒˆ
๐Ÿฅฌ Chopped kohlrabi, red pepper, carrot, sugar snap peas, courgette, green onion, purple cabbage and summer greens.

We had a mixture of wholemeal and white rice noodles in the end. I find wholemeal noodles are often challenging to come by and usually grab a bag whenever I see some but today we were short.

Tempeh is made from fermented soy beans. It has a slightly nutty flavour and a firm texture. Itโ€™s an excellent protein source and works really well in stir fries. Itโ€™s accessible from most major supermarkets in the plant based fridge section next to the tofu.

Kids loved it and so did we!

General schmorgasbord of goodies out of the fridge because when itโ€™s as hot as this I canโ€™t ever decide what to eat never mind be bothered to cook.

Wholemeal sourdough with various salads.

Dips were homemade -

Vegan โ€œfetaโ€ & pistachio
Beetroot and cannellini bean

Beer is a lovely non alcoholic IPA ๐Ÿบ
