How is the weather at yours? I'm soaking up the likely last bits of summery sunshine we are getting now in England and I found a recipe to match from my archives! The soup was quick to make and uses a lot of herbs. I think this is a keeper.
The was in the booklet that came with my lovely Le Creuset teal cast iron pot. You will find it on the Le Creuset UK website, it's called "Pea and Zucchini Soup with Yoghurt & Minted Almond Salsa". In the booklet it was pea and courgette π
I don't know how you feel about it but 200g of courgette/zucchini felt like very little when you make six portions of soup and my courgettes were 200g each even if I thought they were medium so I tripled the amount of courgette. I suspect you might quite like to do so as well. I am very into the minted almond salsa, a lovely addition. I will need to make bread to enjoy the leftovers...
