🎄 Who wants the ingredients for these low carb mince pies?⬇️

Recipe borrowed and adapted to my liking from . I LOVE her original recipe so the pastry is EXACTLY the same but I have to be really careful with adding certain fruits, dried and fresh so I’ve made it gut friendlier for those of us with reactive guts.

Ingredients

The Pastry:
100g of almond flour
30g coconut flour
1/2 tsp of baking powder
1/2 tsp Xantham Gum
Pinch of salt
70g of cold butter
30g cream cheese
1 large egg + extra for egg wash

The Filling:

100g of chopped almonds
30g chopped Pecans
2 tbsp of h**p hearts
1 tbsp of freeze dried raspberries
Zest of 1/2 an orange
1/2 tsp ginger
1/2 tsp cinnamon
1/2 tsp Allspice
1/2 tsp vanilla powder, sugar free
4 tbsp Erythritol
30g melted butter
3 to 4 tbsp of water (extra if needed)

Powdered sweetener & cream to serve

Pastry:
Pulse all dry ingredients together in processor, pulse in butter, pulse in the egg & process gently until dough is formed. Roll into a ball & cover with cling film, place in freezer for at least 20 mins.

Filling:

Place all ingredients into a pan & heat until thick like a risotto but still with plenty of moisture, add extra water if too dry. Keep it moist. Taste & adjust sweetness if necessary. Let it cool.

Set oven to 180C/350 F

Grease a Yorkshire pudding tin or shallow muffin tray. Roll out pastry to 3 to 4mm thick, use 7.5cm cutter to make 6 bases (8 for smaller pies) place them in the tin & put in the freezer. You might need to refreeze the leftover pastry before you make the tops, this pastry has to be icy cold otherwise it’s too messy to work with.
Cut out the star tops & place in freezer, next fill the bottoms with the cooled filling & add the chilled stars on top. Seal the star edges gently so you don’t squish the shape then wash with egg.
Bake in centre of oven for around 18 mins, keep an eye on them.

Dust generously with powdered sweetener to serve & a dollop of cream!

I smile A LOT!!!

However, never judge a book by its smiley cover!!

Yes I’ve got a decent list of niggles going on, but if it weren’t for my dietary and lifestyle choices this list would be unbearable.
Even writing this caption is painful for my hands, my fingers lock around the phone and when I try using my laptop instead my elbow is a nightmare.
But I push on and I’m grateful because I’m so much happier than I was 7 years ago before I decided to be the author of my own destiny with health.

⏰ Do you have time to be consistent?

*Story time ⬇️

I was talking about this the other day in my stories, about how as boring as it sounds the major key to change in your health and body shape is consistency.

As a teen with an eating disorder I swung between being skinny and overweight. My poor body suffered so much grief, internally and externally. My gut health was a mess and so was my mental health, I used to be so insecure and even though I may seem confident on Instagram I’m still that shy teenager who called her parents to come pick her up after 30 minutes of being at social event.

So how did all this change? Obviously getting older helps, having kids naturally brings out the lioness in all of us. But the major turning point for me was when I discovered keto and then realising the need for consistency in both my eating AND my workouts.

This doesn’t mean working out everyday but it means sticking to some kind of schedule.
I love feeling and seeing a change in my body, I embrace the challenge, it IS hard work.
If you want to see a real change in body shape then exercise is the way to go. Keto’s got your back for fat burning and transforming your health, exercise is there to put the cherry on the top!

🧈Do you ever think about what actually constitutes a fat?🥑

6 years ago I started my keto journey after years in both the catering and the meal prep Industry. I never used to really think about fat, other than
the abundance of misinformation surrounding it :

“Fat is bad you”.

What a load of crap that was! Yes there are very bad forms of fat, the trans fats, the fats that have been mutated beyond belief.

Fat is very much needed, and it’s taken me 6 years to appreciate its brilliance, I’m 42 and could kick my 25 year old ass, I’m happier, fitter, healthier and more vibrant than I’ve ever been. I’m also the least hungry I’ve ever been.

I think there’s something in the air right now, it’s not just myself who is talking about the good and bad fats, there’s a gang of us really wanting to drive this message home.
