This 5-ingredient stuffed sweet potato with black beans, spinach, and hummus dressing is a hearty yet quick lunch for one! π
1οΈβ£ Using a fork, prick the sweet potato all over. Microwave on high for 7 to 10 minutes, or until well cooked.
2οΈβ£ In the meantime, wash and drain the kale, leaving the water to cling to the leaves. Place in a medium saucepan; cover and simmer, stirring once or twice, over medium-high heat until wilted. Add the beans and, if the pot is dry, a tablespoon or two of water. Cook, uncovered, for 1 to 2 minutes, stirring regularly, until the mixture is scorching hot.
3οΈβ£ Open the sweet potato and place the kale and bean mixture on top. In a small bowl, combine hummus and 2 tablespoons water. As needed, add more water to achieve the desired consistency. Drizzle the hummus dressing over the sweet potatoes that have been filled.
