Leftovers from last night’s Slimming World Kitchen dinner — because nothing beats a tasty, no‑fuss lunch that keeps you on track 💛

I’ve mixed things up and added a couple of Healthy Choices too:

✨ Slimming World Kitchen tonight… and wow, this one delivered! ✨

I tried the Middle Eastern Prawns with Roasted Veg Couscous and it was an absolute flavour bomb — fresh, colourful and beautifully on plan ❤️

From the roasted veggies to the juicy prawns and that gorgeous couscous base, it’s one of those meals that feels a bit fancy but is still super simple to put together. Proper satisfying, proper tasty, proper Food Optimising magic 💪

If you haven’t given this one a go yet, pop it on your menu — it’s a winner for busy nights and feels like a treat without going off track ✨

WOW!! What a morning.
I’m still feeling overwhelmed — in the best way — after seeing 247 bags collected and loaded into the van for . That’s an incredible £6,175 raised, all because of the wonderful people of all groups in Portsmouth as well as my Paulsgrove, Hilsea and Portsmouth Rugby Club Slimming World members chose to give back by donating the clothes they’ve lovingly, proudly slimmed out of 🥰

This was my first since becoming a consultant, and honestly… it meant more than I can put into words. Watching our groups come together — people who’ve supported each other through highs, lows, laughter, tears, and every step of their journeys — and then seeing them create something so powerful for others… it filled me right up.

And we had a little helper by our sides which made it even more special ❤️
Moments like this remind me exactly why I do what I do.
