Make a few cuts in the gooseberries and place them in a clean jar. Pour in filtered water until the fruit is fully covered, then add some salt and a splash of lemon juice. Give the jar a good shake, and let it sit for a couple of days. Make sure the gooseberries stay submerged under the water.
