National Pie day
I often make a leek pie with a big green salad to go with it
I’ll often throw in left over chicken/ham and maybe leftover soured cream/youghurt with the egg mixture. Ie this is a bit of a throw it all together recipe:
Dough for the pie
75g white flour
75 g wholewheat flour
50 g oats
75 ml water
25 ml olive oil
1 tsp of salt
Grease a pie form and spread the dough out and pre cook for 20 mins
Filling:
3 leeks cut into fine rings and boiled for a few minutes
4 big eggs
50 ml milk
And add whatever soured cream/cottage cheese you have in your fridge
1/4 tsp of grated nutmeg
1 tsp fresh time
1 1/2 tsp of salt (I prefer herb salt)
Pepper
1 tbp of paprika
Sprinkle any leftover cheese on top
Cook at 200° C for 25-20 mins
And enjoy with a big salad
