It's good to see nutrition and covid being discussed in the same sentence, this gets so over looked and nourishment is absolutely crucial for prevention and recovery.

Just got back from a very soggy, yet invigorating walk and was ravenous. So I made a super quick leftover lunch.

Is it pretty? Hmmm? Is it healthy? Yep. Is it delicious? Absolutely!

Took me 2 minutes to assemble. Leftover mince from Monday night’s shepherds pie, potatoes and red onions from Tuesday night's Gousto meal, peas and mange tout left over from last night. Supplemented with some rocket and lambs lettuce to make sure my plate is half vegetables. A handful of olives for added essential fats and polyphenols, a dollop of hummus because it’s yum and a very generous glug of extra virgin olive oil. Et voila. Lunch in minutes from what I already had in the fridge and I didn't even bother heating it up!

Please don’t feel that eating healthily has to be laborious, it really doesn’t.

This meal ticks so many boxes. Good quality protein, tick. Essential fats, tick. Fibre, tick. Polyphenols and antioxidants, tick. It is gut loving, immune supporting, blood sugar balancing and satisfying.

Life is hard right now, I’m really feeling it. Make things easier for yourself and support your stressed-out body with optimum nutrition.

My main tip is when you cook in the evenings make extra and keep easy additions like jars of olives and salad leaves ready in the fridge and whack it all together for a leftover lunch. It means it’s one less thing to think about.

Welcome to the Nutritional Medicine Clinic. My name is Michele Kingston I am a qualified nutritional therapist and functional medicine practitioner. I have been consulting for nearly 10 years. I have seen more than 200 patients, both adults and children, from around the world, with a variety of different illnesses and needs. Over this time, I have seen amazing results and also, I am living proof that nutritional medicine can have a powerful impact on health.
