Not only is this recipe for Spiced Carrot & Lentil soup delicious, but as it is packed with Vitamins A, C & E and Lutein it will also aid in supporting your eye health. See below for the recipe:
Dry fry 2 teaspoons for cumin seeds and a pinch of chilli flakes for around 1 minute until fragrant.
Put this aside and heat 2 tablespoons of olive oil into a large saucepan. Add 600g of grated carrots, 140g split red lentils, 1 litre of vegetable stock and 125ml of milk to the pan and bring to a boil. Add in half of the toasted spices and leave to simmer for around 15 minutes until thr carrots and lentils have softened.
Blitz the soup in a food processor until it reaches your desired texture.
Serve with a tablespoon of plain yogurt and a sprinkle of the left over toasted spices. Delicious with a warm naan bread.
