☀️ Summer Salmon Salad Bowl
Ready in 20 mins - High protein & high nutrient
🌿 This vibrant, nutrient-dense salad bowl is the perfect summer plate. Fresh, filling and full of colour! You can prep everything while the new potatoes are boiling. It’s all served beautifully in one big bowl, ready for you to dig in!
Ingredients (serves 1–3):
• A handful of new potatoes, quartered
• 1 ripe avocado, sliced
• 1 large beef tomato, sliced
• A few fresh basil leaves
• 3 soft-boiled eggs, peeled and sliced
• 80–100g smoked salmon
• Sea salt & cracked black pepper
• Olive oil (for drizzling)
• Fresh lemon juice (for finishing)
Method:
1. Boil the new potatoes for about 12–15 minutes until fork-tender. Season with a little salt and set aside. (Add fresh garlic if want that extra punch!
2. While the potatoes boil, soft-boil the eggs (6–7 minutes), then peel and slice.
3. Prepare the rest of your ingredients: slice the avocado and tomato, and tear a few basil leaves.
4. In a large bowl, arrange everything side by side: a bed of seasoned potatoes, sliced avocado, tomato with basil, soft eggs, and a generous helping of smoked salmon.
5. Season the whole bowl with salt, pepper, a drizzle of olive oil, and a squeeze of fresh lemon juice.
To serve:
🍋 Enjoy as is or pair it with some fresh focaccia and a dollop of cream cheese or yoghurt on the side.
