Quick & fresh Lunch Inspo 🌿🍳

Super fast homemade flatbreads made in minutes using yogurt instead of water – no proving, no fuss, just pan-fried perfection. Seasoned & dried herbs inside. Topped with creamy scrambled eggs, smoked salmon, and a little olive oil drizzle.
On the side - a simple tomato & basil salad. And some creamy extra mature cheese.

Perfect mix of protein, healthy fats, and colour on a plate ✨ And enough dough left over for bread another day 🥖 🍅

Leftovers! With a Moroccan kick ☀️

🫓 I made these golden, garlicky flatbreads from dough balls I saved in the fridge from yesterday. Pan-fried until puffed and crispy, then coated in homemade garlic & herb butter - all melty and rich. (Microwaved for a few seconds to soften)

🍗 Sliced up leftover BBQ chicken breast, gave it a spice rub and a quick pan-fry to bring it back to life — juicy, crispy edges, full of flavour.

Served with a generous scoop of Moroccan-spiced hummus for dipping, a cooling chilli yogurt drizzle made from the last bit of garlic butter, Greek yogurt and chilli oil. Topped it all with pomegranate jewels, spinach, and fresh tomatoes.

Waste nothing, eat everything.

🔥 Homemade Flatbreads with a Kick 🫓

Woke up thinking about flatbreads! … So I made some 😄

🫓 Flatbreads:
Mix 500g white flour, 2 tsp baking powder, 1 tsp salt. Slowly add 300ml water, mix, knead into a soft dough. Cover and rest while prepping the toppings.

🔥Spiced Chickpeas:
In a pan, add 2 cans of chickpeas (with a bit of the water), 2 chopped garlic cloves, smoked paprika, a dollop of chilli boost paste, lemon zest + juice. Pan-fry until saucy and sizzling.

🧄 🧈 Garlic Butter Mushrooms:
Chop mushrooms + garlic, parsley, and a k**b of butter. Wrap in foil and grill over fire until tender.

🌿 Back to the dough:
Divide into 8, roll into balls, then flatten into rustic circles. Brush with oil and grill until bubbly and golden. Finish with garlic herb butter—melts like a dream.

🍋 Serve with:
Greek yoghurt swirled with chilli oil, a sprinkle of pomegranate seeds, lemon wedges, and a drizzle of extra virgin olive oil.

🔥 One-Pot Fire-Cooked Sausage & Bean Stew 🥘

This summer, please give this a go! A smoky, spicy, deeply comforting sausage and bean stew, cooked all in one pot over the fire. Simple ingredients, big flavour, absolutely worth it!

Started with diced onion, carrot, and garlic in a glug of good olive oil, then sautéed until golden and fragrant. In went pork & apple sausages with a k**b of real butter, just enough to start getting that gnarly caramelised edge.

Then came the flavour bomb:
• Tinned chopped tomatoes
• Baked beans
• Mixed beans + butter beans
• A spoon of harissa paste
• A spoon of smoked chilli paste
• A load of smoked paprika
• A squeeze of tomato purée
• A dollop of Reggae Reggae BBQ sauce
• Salt to taste
…and of course, a final handful of fresh thyme.

If it’s too thick, loosen it with a splash of water and let it blip away until rich and bubbling.

🔥 Sweet. Spicy. Smoky. Punchy.
🔥 Better as it sits. Even better a couple hours later.
🔥 No leftovers? No chance.

See how leftover BBQ sausage turned into the best breakfast wrap 🌯

🌿 Why I’m obsessed - Leftovers save time, cut waste, and somehow taste even better the next day.

BBQ Leftover Breakfast Burrito (1 big wrap)
* Dice 1 leftover BBQ sausage. Sauté in a hot pan with a handful of halved cherry tomatoes, fresh basil, s & p until caramelized.
* Scramble 2 eggs → soft & fluffy.
* On a large tortilla: layer 1 slice of cheese, the eggs, the sausage‑tomato mix, and a sprinkle of parsley.
* Tuck, roll, and pan‑sear on all sides till golden and melty.
* Slice, let the cheesy goodness ooze, and enjoy that smoky BBQ kick all over again.

Prawn Linguini 🌿 With the chopping and how good it smells, this dish makes you feel like a chef! - but it’s secretly super simple 🤫🍝🍋

(serves 2–3)

Finely dice:
• 2 shallots
• 2 garlic cloves
• A little red chilli
• The stalks & leaves from a bunch of parsley
• A good handful of cherry vine tomatoes (cut into eighths)

👉 In a pan with a little olive oil, cook the garlic, shallots, chilli, and parsley stalks for a couple of minutes.
👉 Add the tomatoes and a good pinch of salt. Simmer for 10 mins.

While that gently bubbles away, boil your linguini in salted water for 8–10 mins until al dente.

👉 Add prawns to the tomato mix with the zest of 1 lemon and a small squeeze of juice. Cook until they turn pink.
👉 Toss in your drained pasta along with a splash of pasta water and mix everything through.

Taste, season well, and serve with fresh parsley and a wedge of lemon. 🌿🍋

☀️ Summer Salmon Salad Bowl
Ready in 20 mins - High protein & high nutrient

🌿 This vibrant, nutrient-dense salad bowl is the perfect summer plate. Fresh, filling and full of colour! You can prep everything while the new potatoes are boiling. It’s all served beautifully in one big bowl, ready for you to dig in!

Ingredients (serves 1–3):
• A handful of new potatoes, quartered
• 1 ripe avocado, sliced
• 1 large beef tomato, sliced
• A few fresh basil leaves
• 3 soft-boiled eggs, peeled and sliced
• 80–100g smoked salmon
• Sea salt & cracked black pepper
• Olive oil (for drizzling)
• Fresh lemon juice (for finishing)

Method:
1. Boil the new potatoes for about 12–15 minutes until fork-tender. Season with a little salt and set aside. (Add fresh garlic if want that extra punch!
2. While the potatoes boil, soft-boil the eggs (6–7 minutes), then peel and slice.
3. Prepare the rest of your ingredients: slice the avocado and tomato, and tear a few basil leaves.
4. In a large bowl, arrange everything side by side: a bed of seasoned potatoes, sliced avocado, tomato with basil, soft eggs, and a generous helping of smoked salmon.
5. Season the whole bowl with salt, pepper, a drizzle of olive oil, and a squeeze of fresh lemon juice.

To serve:
🍋 Enjoy as is or pair it with some fresh focaccia and a dollop of cream cheese or yoghurt on the side.
