Inspired after watching ‘What Not To Eat’ on Channel 4 earlier this week I thought I’d give Tim Spector’s Tray Baked Aubergine recipe featured in his ‘The Food For Life’ cookbook. I love aubergines and I have to say this say absolutely delicious, full of flavour and it made a very satisfying meal. The tahini, kefir and sumac dressing finished it off beautifully. I served it on a bed of spinach, watercress and rocket 😍

Very mindful that we will be eating lots of rich food over the next week so last night we had a lovely butternut and chickpea tagine with couscous. Packed with lots of lovely flavours and there is enough of another meal that I’ll pop in the freezer.
