๐ŸฅžPancake Platter ๐Ÿฅž

Gather your favourite toppings and combine them with our slimming-friendly pancakes to make a sharing board that tastes flippinโ€™ pan-tastic!

6 Syns per serving
45 minutes plus 20 minutes soaking
Serves 6

๐Ÿฅž๐Ÿ“๐Ÿซ๐Ÿฅ“Ingredients ๐Ÿ“๐Ÿซ๐Ÿฅ“๐Ÿฅž

โญ๏ธ4 large eggs
โญ๏ธ460ml plain and unsweetened almond drink
โญ๏ธ2 level tsp sweetener granules, plus 2 level tsp to serve
โญ๏ธ2 tsp vanilla extract
โญ๏ธ100g plain porridge oats
โญ๏ธ2 level tsp baking powder
โญ๏ธ100g self-raising flour
โญ๏ธLow-calorie cooking spray

To serve:

โญ๏ธ200g fresh raspberries, blackberries and blueberries
โญ๏ธ150g fresh strawberries, halved
โญ๏ธ1 fresh peach, stoned and sliced
โญ๏ธA pot of fat-free natural yogurt sprinkled with cinnamon
โญ๏ธ6 cooked rashers of lean back bacon, visible fat removed
โญ๏ธ4 eggs, scrambled (without butter or oil)
โญ๏ธ2 small jugs of maple syrup, to serve (add 2 Syns per level tbsp)

๐ŸคฉMethod๐Ÿคฉ

โญ๏ธHeat your oven to 150ยฐC/fan 130ยฐC/gas 2.

โญ๏ธSeparate the eggs into 2 mixing bowls and, using a fork, whisk the almond drink, sweetener and vanilla extract into the yolks. Stir in the oats and baking powder and leave to soak for 20 minutes.

โญ๏ธSift the flour over the oaty mixture and fold it in. Using an electric hand whisk, whisk the egg whites into soft peaks, then gently fold them into the oats using a large metal spoon.

โญ๏ธSpray 2 large non-stick frying pans with low-calorie cooking spray and put them over a medium heat. When itโ€™s hot, add a couple of spoonfuls of the batter, spaced well apart (youโ€™re aiming to make 24 pancakes altogether). Cook for 2 minutes or until bubbles start to appear in the top of the pancakes and the undersides are golden brown. Flip the pancakes over and cook for another 2 minutes. Put them on a plate, cover with a clean tea towel and keep warm in the oven while you cook the rest.

โญ๏ธWhen all the pancakes are ready, arrange them on a large serving platter or board. Arrange the fruit, yogurt, bacon, the bowl of scrambled egg, and jugs of maple syrup around the board, then let everyone help themselves!

It is with deep sadness that we share the news that our beloved founder Margaret Miles-Bramwell OBE passed away earlier today, surrounded by her family.

As well as being our guiding star and the beating heart and soul of Slimming World, Margaret will be remembered for being a much loved mum, grandmother and great-grandmother.

Since founding our precious organisation 55 years ago, she has loved, nurtured and protected it โ€“ along with each and every member, staff member and Consultant whoโ€™s been a part of the Slimming World family. Margaret steered her ship in the way she lived her life โ€“ with a generous spirit, passionate conviction, a wicked (and rebellious!) sense of humour and a fierce belief in doing the right thing.

Her determination to help people shed the burden of excess weight without shame or guilt has seen Slimming World grow from a single group in 1969 to the global authority in weight management that it is today. She undoubtedly touched hearts and changed lives for millions of people โ€“ and for all of us who knew and loved her. Sheโ€™ll continue to do so for many more years to come.

Our thoughts are with Margaretโ€™s family. We take comfort, as weโ€™re sure they do, in the hope that Margaret is now reunited with her beloved Tony โ€“ sailing off into the sunset together. https://bit.ly/42F5Eia

This modern-day Chinese takeaway favourite has taken the internet by storm โ€“ and our Food Optimising-friendly version is just as tasty!

๐Ÿฅ”๐Ÿซ‘๐Ÿง…Ingredients ๐Ÿง…๐Ÿซ‘๐Ÿฅ”

โญ๏ธ2 medium baking potatoes, cut into chips
โญ๏ธLow-calorie cooking spray
โญ๏ธ1 small red onion, diced
โญ๏ธ1 small red pepper, deseeded and diced
โญ๏ธ2 spring onions, sliced

๐ŸคฉMethod๐Ÿคฉ

โญ๏ธPreheat your oven to 200ยฐC/fan 180ยฐC/gas 6. Spread out the chips on a large non-stick baking tray in a single layer. Spray with low-calorie cooking spray and bake for around 40 minutes or until golden, turning halfway.

โญ๏ธWhen the chips have been cooking for 30 minutes, spray a large non-stick wok or frying pan with low-calorie cooking spray and put it over a medium-high heat. Stir-fry the onion and pepper for 5-6 minutes or until softened and a little coloured, then stir through the spring onions and set aside.

โญ๏ธOnce the chips are cooked, toss with the veg. Lightly season with salt and a generous twist of black pepper to serve.
