✨ Staying Well Before Christmas – Immune Support ✨

As we move further into December, colds and winter bugs often start circulating more widely. Supporting the body early can make a real difference in how you move through the season.

🌿 Ferrum Phosphoricum – A great remedy at the very first signs of a cold. Helpful for low energy, a scratchy throat, or that sense that something is just starting.

🌿 Eupatorium Perfoliatum – Useful when winter illnesses come with aching limbs, heavy fatigue, or that “everything hurts” feeling.

🌿 Gelsemium – For colds that arrive with heaviness, drowsiness, and a desire to rest rather than push through.

Gentle support at the early stages can help you stay steadier and enjoy the lead-up to Christmas with more ease.

🎅 Christmas Kombucha (Spiced & Festive) 🎅

A warming, winter-spiced kombucha for the festive season.

Ingredients (1 litre):
– 1 litre plain, fully fermented kombucha
– 1 cinnamon stick
– 4–5 whole cloves
– 3–4 allspice berries
– 1 thin slice fresh ginger
– Zest of ½ orange (no pith)
– Optional: 1–2 tsp orange juice or apple juice for sweetness

Method:

1. Add all ingredients to a clean flip-top bottle.

2. Seal and leave at room temperature for 2–4 days for second ferment.

3. Burp daily and taste after day 2.

4. When lightly spiced and carbonated, strain if desired and refrigerate.

To serve:
Chilled, or gently warmed (do not boil) for a mulled-style drink.

Notes:
– Strong spices extract quickly; remove cinnamon early if needed.
– This keeps well in the fridge for up to a week.

✨Staying Well Before Christmas – Digestive Support ✨

As the festive season picks up, many of us start enjoying richer foods, early gatherings, and the first round of celebrations. If your digestion feels a little more sensitive at this time of year, homoeopathy can offer gentle support.

🌿 Lycopodium – Great if you feel bloated, gassy, or uncomfortably full after even small amounts of food. Helpful for that “tight waistband by mid-afternoon” feeling.

🥧 Sourdough Mince Pies 🥧

We always have a mince pie and listen to Christmas music when we decorate the tree. 🎄

This year, my son suggested I make sourdough mince pies (mincers, as he used to say when little!). So here they are:

Sourdough Mince Pies (Makes 24)

Pastry:

500 g plain flour

100 g coconut sugar

1 tsp fine salt

300 g cold butter, diced

200 g cold sourdough starter (straight from the fridge)

2 egg yolks (optional)

Cold water as needed

Method:

1. Mix flour, coconut sugar, and salt.

2. Rub in the cold butter until sandy.

3. Add the starter and yolks. Bring into a dough.

4. Add a splash of cold water only if needed.

5. Wrap and chill for 1–2 hours.

Filling:

600–700 g mincemeat (I used mincemeat and it was delicious)

Optional: orange zest, 1 tbsp brandy/rum, chopped nuts or dried fruit (I added orange zest, which I recommend)

Mix together.

Assembly:

1. Heat oven to 190 °C (170 °C fan).

2. Roll pastry to about 3 mm.

3. Cut bases and lids for 24 mince pies.

4. Fill each with a heaped teaspoon of mincemeat.

5. Add lids, brush with milk or egg.

6. Chill the tray 10–15 minutes for neat tops.

7. Bake 18–22 minutes until golden.

✨ Tips:
• Don’t stretch the lids. Cut them slightly larger so they don’t crack.
• A simple fork cross, tiny cutter imprint, or sugar sprinkle makes an easy decoration.
• Freeze unbaked pies for the flakiest results.

I baked half and froze half.

One pie just had to be sampled while it was still warm with a soothing mug of Christmas tea from - complete with wise words 👌

We were very happy with the results! Perfectly tender pastry, a hint of sourdough tang, and the coconut sugar gives a warm, caramel note.

✨The Festive Season Begins ✨

For two lovely groups, this began with creating some seasonal ferments and there was much talk of unique, homemade gifts of deliciousness in a jar! 🫙🎁🍶

It's time to set the record straight! 💪

1. "It's just placebo"

Tell that to:

👶 The babies who stop crying when given teething granules (yes, they're homoeopathic Chamomilla!).

🐄 The farmers seeing less mastitis (and therefore using fewer antibiotics!) in their sheep and significantly increased fertility in their cows. Check out the amazing for more on that.

🍓The gardeners getting healthier yields of strawberries, cucumbers and tomatoes (and therefore using fewer pesticides!).

2. "It's not scientific"

Homoeopathy is based on fixed principles:

🌿 Like cures like: A substance that can produce symptoms in a healthy person may, in highly diluted form, help treat similar symptoms in someone unwell. Some pharmaceuticals follow this principle too, such as the heart drug Digitalis, synthesised from foxgloves which cause cardiac symptoms if consumed.

✨Minimum dose: Remedies are given in the smallest possible dose, often at extreme dilutions, to minimise side effects and stimulate the body’s response.

1️⃣ Single remedy: Traditionally, one remedy is chosen at a time based on the totality of the person’s symptoms. This is why different patients will receive different remedies, even if they have the same condition. We treat the PERSON, not the disease label.

3. "There's nothing in it so it can't work"

🧑‍🔬Made using a process of ultra high dilution and succussion (vigorous shaking to agitate the molecules), the substances used are rendered safe, whilst imparting crucial information of their properties that stimulate the body's own healing properties. "FIRST DO NO HARM"

Whole-Fermented Apples (Lacto-Ferment) 🍏

🍁This autumn has been so bountiful and lovely people keep giving me delicious apples! So I've been experimenting with healthy ways to make use of them.

A simple, naturally fizzy ferment using whole apples, salt, and a little sugar.

Ingredients (2-litre jar)
• 5 small firm apples
• 8 tsp salt (2% brine)
• 2–4 dessert spoons sugar
• Optional: cinnamon stick, cloves, or ginger
• Non-chlorinated water

Method

1. Dissolve 8 tsp salt in 2 litres water.

2. Wash the apples and pierce each once with a skewer.

3. Pack apples and any spices into the jar.

4. Pour the brine over them.

5. Add 2–4 dessert spoons sugar and dissolve.

6. Keep the apples submerged with a weight.

7. Use an airlock lid or leave the lid slightly loose.

8. Ferment at room temperature for 5–14 days, tasting from day 5.

9. Refrigerate when the flavour is right. Keeps 1–3 months.

🍏 Crisp, tangy, lightly fizzy fermented apples ready for winter👌
