🥧 Sourdough Mince Pies 🥧
We always have a mince pie and listen to Christmas music when we decorate the tree. 🎄
This year, my son suggested I make sourdough mince pies (mincers, as he used to say when little!). So here they are:
Sourdough Mince Pies (Makes 24)
Pastry:
500 g plain flour
100 g coconut sugar
1 tsp fine salt
300 g cold butter, diced
200 g cold sourdough starter (straight from the fridge)
2 egg yolks (optional)
Cold water as needed
Method:
1. Mix flour, coconut sugar, and salt.
2. Rub in the cold butter until sandy.
3. Add the starter and yolks. Bring into a dough.
4. Add a splash of cold water only if needed.
5. Wrap and chill for 1–2 hours.
Filling:
600–700 g mincemeat (I used mincemeat and it was delicious)
Optional: orange zest, 1 tbsp brandy/rum, chopped nuts or dried fruit (I added orange zest, which I recommend)
Mix together.
Assembly:
1. Heat oven to 190 °C (170 °C fan).
2. Roll pastry to about 3 mm.
3. Cut bases and lids for 24 mince pies.
4. Fill each with a heaped teaspoon of mincemeat.
5. Add lids, brush with milk or egg.
6. Chill the tray 10–15 minutes for neat tops.
7. Bake 18–22 minutes until golden.
✨ Tips:
• Don’t stretch the lids. Cut them slightly larger so they don’t crack.
• A simple fork cross, tiny cutter imprint, or sugar sprinkle makes an easy decoration.
• Freeze unbaked pies for the flakiest results.
I baked half and froze half.
One pie just had to be sampled while it was still warm with a soothing mug of Christmas tea from - complete with wise words 👌
We were very happy with the results! Perfectly tender pastry, a hint of sourdough tang, and the coconut sugar gives a warm, caramel note.
