I absolutely love this meal. It's so tasty, full of protein, and high in fibre, yet it feels like a takeaway/treat dish πŸ˜‹ Even the hubby loved this when I made it. No moaning of where is the meat πŸ˜‚ it was all in the flavours!

All you need is a tin of black beans, veggies of your choice, spices and tomato paste. Even the tortillas can be of your choice, so they can be white, corn, wheat, or gluten-free varieties. I added cheese to mine, which also helps seal the tortillas together when toasting or grilling. Serve with guacamole and salsa and enjoy πŸ˜‹

Banana Split Breakfast πŸ˜‹ 🍌πŸ₯ πŸ₯œ

This is an absolute delicious healthy breakfast, of which you can be as creative as you like with this, choosing fruits of your choice, nut butters, cocoa chips, etc

Mine consists of:-

1 Banana - cut in half
1 Kiwi - chopped
I heaped tbsp of authentic Greek Yoghurt
Pecans chopped - 1 tbsp
Nutty granola - 1 heaped tbsp
Blueberries
Peanut Butter - 1 heaped tbsp melted to be drizzled over

Toffee Crisps Treats made healthy, guilt free and indulgent πŸ˜‹

Makes 10 bars

Ingredients for base:
12 large medjool dates - pitted
1/2 cup smooth peanut butter (120g) or alternative nut butter
1.5 cups puffed quinoa (40g)

Topping:

125g dark chocolate

Method:

1) Toast the puffed quinoa for 5 mins in the oven at 180C/350F, so it's crispy. Don't miss this bit out.

2) Add the dates and peanut butter to a food processor and blend until smooth. Add 1-2 tbspbof water as you blend if needed. Just be mindful, you do not want the mix to be too wet as it will make the quinoa soggy.

3) Add in the quinoa and pulse to mix well. Shape into mini rectangular bars. Then refrigerate for 1 hour.

4) After 1 hour, melt the chocolate and dip each of the bars and then place back in the fridge to set.

15-20 MINS CORE WORKOUT

Grab yourself a core resistance band and a dumbbell/kettlebell and get those core muscles burning πŸ”₯ with this quick workout.

➑️ Single Leg Reverse Crunches x 8 reps each leg
➑️ 3 Way Incline Abductions x 3 reps each incline x 3 sets
➑️ Russian Twists x 10 reps
➑️ Windmills x 8 reps each side

Do 3-4 rounds with 60 seconds rest in between.
