🌞🇬🇷 FUNDAY FRIDAY RECIPE – Greek Chicken! 🇬🇷🌞
Missing the sunshine? Wishing you were back on a Greek island with a plate of fresh, vibrant food? This week’s Funday Friday is a little different, I’ve never shared a recipe on here before! But this is one of my go to healthy week night dinners and I know that I always need a little recipe inspiration from time to time.

I’m not a nutritionist, so I haven’t calculated calories or macros, this is simply a recipe I really enjoy and one that makes me feel good. I hope you love it too!
💛 Why this recipe is a winner:

✨ The Recipe ✨
Chicken Seasoning
• 2 tsp oregano
• 1 tsp mint
• 1 tsp coriander
• 1 tsp cumin
• 1 tsp sweet paprika
• ½ tsp cinnamon
• Zest & juice of 1 lemon
• 4 garlic cloves
Greek Salad
• 1 cucumber
• 1 green pepper
• 4 large vine tomatoes
• ½ red onion
• 85g feta cheese
• 16 Kalamata olives
• 1 tsp oregano
• 1 garlic clove
• 4 tbsp Greek extra virgin olive oil
🔥 How to bring it together:
1. Season 500g of diced chicken breast with the seasoning ingredients and coat the chicken well before frying until golden and cooked through.
2. Whilst your chicken is cooking, chop all your salad ingredients, crumble over the feta, drizzle with olive oil, and sprinkle with oregano.
3. Optional: Toast a wholemeal pitta, spread a small tbsp of hummus inside, then stuff with chicken and salad for a filling, healthy wrap.
