Sometimes on Sunday, I like to do something not quite so traditional for Sunday lunch. We are also super busy on Sunday mornings so need an easy mid day meal to just walk into. Slow cooked Chinese Pork does the trick. I can put it in the slow cooked before all the Sunday morning clubs then just walk into a ready meal at lunchtime .
Recipe
0.6kg pork loin
5 Tbsp honey
3 Tbsp dark soy
3-4 garlic cloves
2-3cm fresh ginger
1 Tbsp rice wine vinegar
1 Tbsp sesame oil
Black pepper
100ml stock of choice
In a bowl mix the honey, soy sauce, garlic, ginger, rice wine vinegar, sesame oil, black pepper and stock. Set aside.
Heat a large frying pan with a little oil of choice, I used a little vegetable oil.
Add your pork fillet to the pan and seer it on all sides so that it is just starting to go brown. It should take about 2 to 3 minutes on each side.
Once it is starting to go golden transfer the pork to a slow cooker.
Pour over the marinade and cover with a lid.
Cook on high for 4 to 5 hours, or until the pork is 145°F in the centre.
When it is cooked, remove the pork from the slow cooker and wrapped tightly in foil. Place this somewhere warm to rest for 10 minutes. Whilst the pork is resting transfer the marinade to a small pan and gently simmer to reduce it.
I like to get to a lovely sweet and sticky sauce, but how thick you want it is up to you! Once you have it as you like it turn off the heat. Serve your pork sliced and with the dressing drizzled over it.
This dish goes really well with a variety of side accompaniments including cauliflower rice, noodles, rice or some vegetable stirfry. You can use a little of the sauce on these if you wish to.
