πŸ₯• Beef, Carrot & Apple Meatballs 🍎

These meatballs are really quick and easy to make. You can also freeze them so ideal for batch cooking.
They’re a really good source of Iron, fibre and antioxidants.

Suitable from 6-9 months old.

Ingredients:
🍞 2 slices of bread
πŸ₯› 8tbsp milk
πŸ₯• 1 large grated carrot
🍎 1 small grated apple
πŸ§€ 30g Parmesan cheese
πŸ₯© 250g lean minced beef
+ a little plain flour to roll them in

Method:
1. Break up the bread & add to a large bowl, soak in the milk for about 10mins
2. Add in all the other ingredients and mix up well
3. Shape into balls & roll them in the flour
4. Either bake in an oven on 200/180 fan for 20 mins turning half way through, or you can air fry these on 180 for 10 mins πŸ˜ƒ

Healthy smoothies are an excellent way to get more fruit & veggies into your little ones, especially if they can be picky with their meals. If your child doesn’t like eating their vegetables, you can disguise the taste of broccoli or spinach by adding some strawberries or pineapple to give it a sweeter flavour.

Also getting them involved with making them gets them a bit more excited to try new things πŸ˜ƒ

Here are a few quick and easy recipes that have been a winner in our house.

3 ingredient blueberry smoothie
1 cup blueberries (fresh or frozen)
1 cup coconut milk
1 fresh or frozen banana

Pineapple smoothie
2 cups frozen pineapple chunks
1 cup unsweetened almond milk milk
1 tbsp organic honey

Choconana Smoothie
1 cup milk or dairy alternative
2 tbsp raw cacao
1 fresh or frozen banana
Add some ice if using fresh banana

Avocado & Oatmeal smoothie
1/4 Avocado
1/2 banana
1/4 cup oats
1/2 cup whole milk
1/4 cup water

A tbsp of ground flax seeds are also a really good addition to smoothies. They contain high levels of protein, calcium, iron and are full of antioxidants. They also provide fiber and Omega 3 which is really important for brain development.

We’ve had a go at this mixed berries traybake instead. Kids loved it πŸ₯°

Ingredients:
200g plain flour
200ml milk
2 beaten eggs
1 tsp baking powder
50g caster sugar
1tsp vanilla extract
100g chopped strawberries
100g blueberries
100g raspberries

Method:
Preheat oven to 180
Line a baking tray with nonstick parchment paper
Whisk the flour, baking powder, sugar & eggs & vanilla together, add the milk in slowly.
Whisk until smooth
Pour into the baking tray
Scatter fruits on top
Bake for 25 mins until set and golden on top
