Something different!

Hot Masala Spicy Oat Breakfast

Ingredients (Serves 1):

• 20g rolled oats
• 75g courgette, grated
• 50g spinach, chopped
• 1-cal spray oil
• ½ tsp cumin seeds
• ½ tsp turmeric
• ¼ tsp garam masala
• ½ green chilli, finely chopped
• 1 tsp grated ginger
• Fresh coriander, chopped
• 100ml water

• Optional protein add-in: 40g cooked chicken breast or 1 boiled egg white for extra protein without carbs

Method:
1. Heat spray in a non-stick pan, add cumin seeds and let them splutter.
2. Add ginger, green chilli, turmeric, and garam masala. Sauté for 30 seconds.
3. Add courgette and spinach. Cook for 2–3 minutes.
4. Add oats and water. Simmer until oats are cooked and the mix thickens (about 5 minutes).
5. Stir in optional protein.
6. Top with coriander and serve warm.

Nutrition (approx):
• Calories: 210–230 kcal
• Protein: 10–15g (depending on added chicken/egg)
• Fat: 4g
• Carbs: 18–20g
• Fibre: 6–8g

Cucumber, Avocado & Mango Salsa Salad
Serves 2 – 272 kcals per serving

Ingredients
• 2 skinless cod fillets
• 1 lime, zested and juiced
• 1 small mango, peeled, stoned and chopped (or 2 peaches, stoned and chopped)
• 1 small avocado, stoned, peeled and sliced
• ¼ cucumber, chopped
• 160g cherry tomatoes, quartered
• 1 red chilli, deseeded and chopped
• 2 spring onions, sliced
• Handful chopped coriander

Method

1.
Heat oven to 200°C / 180°C fan / gas mark 6.
Put the fish in a shallow ovenproof dish and pour over half the lime juice, with a little of the zest, then grind over some black pepper.
Bake for 8 minutes or until the fish flakes easily but is still moist.

2.
Meanwhile, put the rest of the ingredients, plus the remaining lime juice and zest, into a bowl and combine well.
Spoon onto plates and top with the cod, spooning over any juices from the dish.

Coach Collins’ Bang Bang Chicken Skewers

Step 2 or Step 3
Serves: 2
Calories per serving: ~200 (Step 2) or up to 400 (Step 3)

Ingredients:
• 250g skinless boneless chicken breast cubed
• 1 tsp olive oil or fry light
• ½ tsp paprika
• ½ tsp garlic granules
• ¼ tsp black pepper
• Pinch of cayenne pepper (optional)
• Pinch of salt

Bang Bang Sauce (adapted):
• 1 tbsp extra light mayonnaise
• 1 tsp fresh lime juice
• 1 tsp sugar-free sweet chilli sauce (e.g. Skinny Food Co)
• A few drops of mild hot sauce (optional, sugar-free)

Optional garnish: chopped fresh coriander or spring onion

Instructions:
1. In a bowl, mix chicken with oil, paprika, garlic, pepper, cayenne, and salt and mix well.
2. Thread onto skewers.
3. Air fry at 200°C for 10–12 minutes, turning halfway, or grill for 15–20 minutes until cooked through.
4. Mix the sauce ingredients in a small bowl.
5. Serve chicken with a drizzle of sauce and a big green salad or steamed veg (like courgette, mushroom, or broccoli).

For Step 3: Serve with 100g steamed basmati rice.

🌸 Eat Like the Okinawans… Without Overthinking It

You don’t need more willpower… you just need this…In Okinawa, one of the world’s Blue Zones, people follow a simple rule:

✨ “Hara Hachi Bu”
👉 Eat until you’re 80% full

Not stuffed.
Not uncomfortable.
Just… satisfied.

💡 Why this is so powerful

Most people don’t struggle because they eat the wrong foods all the time…They struggle because they don’t know when to stop. It takes around 20 minutes for your body to say
“I’m full now.”

And in that time?
It’s very easy to overeat without even realising.

💗 Try this today (my version for you)

✔ Slow your meals down
✔ Put your fork down between bites
✔ Pause halfway through and check in
✔ Stop when you feel comfortable… not full
✔ Leave a couple of bites (yes, really!)
