🍄 Mushroom & Thyme Soup
Serves 2 (Step 2 & above, no carb)
Calories: ~140 kcal per serving
Protein: ~12 g
Carbs: ~5 g (from mushrooms & leek)
Fat: ~5 g
Ingredients
400 g chestnut mushrooms, sliced
100 g leeks, sliced (white part only)
1 garlic clove, crushed
400 ml vegetable stock (low-salt)
100 g cooked chicken breast, shredded (or turkey)
40 g fat-free Greek yoghurt or Quark
Few sprigs fresh thyme (plus extra for garnish)
Spray oil
Method
Spray a non-stick pan with oil and gently cook the leeks, garlic and mushrooms for 6–7 minutes until softened and lightly golden.
Add stock and thyme sprigs, simmer for 15 minutes.
Remove thyme stalks, then blend until smooth.
Stir in shredded chicken and yoghurt for creaminess.
Season to taste and serve with a sprinkle of fresh thyme.
