HEARTY SLIMMING CORNED BEEF PIE 🥧

This I’ve made many times, it’s an oldie but a goodie and we have it often in colder months. Well! It’s cold it’s Autumny and it’s scarf and gloves weather, so this calls for a Hearty Corned Beef Pie Slimming World friendly of course. This is such an easy recipe and absolutely delicious! I normally hate Pease Pudding but when cooked the right way it tastes completely different and makes a fantastic Pastry type topping for any type of Pie. This dish is packed full of warming goodness and is perfect with Veg or Chips, or Gravy or Mushy Peas whatever your style, it’s so simple to do and is absolutely delicious and only 1.5 Syns per portion. I prefer it when I’ve cooked it the day before and then warm it up for tea, for some reason it just tastes even better if that’s possible lol 😂. XxEllexX Recipe Down below 👇🏻.

1.5 Syns per serving, Serves 4
Ingredients
2 Tins Of Lean Corned Beef
2 Tubs Of Pease Pudding
Pinch Of Salt and Pepper
1 Tbsp Onion Granules
1 Egg
3 Large Potatoes
1/2 Crushed Beef Stock Cube
Fry-Light

Method
Preheat the oven to 180c or Gas Mark 5. Peel and chop the Potatoes then pop into a pan and cover with Water, add a pinch of Salt and boil until softened.
Whilst the Potatoes boil add the Pease Pudding into a bowl with the Egg and stir until all mixed together then add a pinch of Salt and Pepper and stir well.
Chop the Corned Beef into chunks.
Once the Potatoes are cooked drain well and tip back into the pan (not on the heat). Add in the Corned Beef, Onion Granules, Crushed Beef Cube and a pinch of Salt and Pepper then mash well. Tip the mixture into a baking dish or foil tray and spread evenly. Spread the Pease Pudding mixture on the top evenly then run a fork through to rough it up slightly. Pop into the oven for around 35 minutes then remove and spray well with Frylight. Place back into the oven for around another 30 minutes until the Pease Pudding is golden and crispy to the touch. CORNED BEEF PASTIES

1/2 SYN CORNED BEEF PASTIES

Hello lovelies,
Brrrr it’s cold out there now we’re heading through Autumn into Winter. It’s that time of year I crave comfort food so I’ve knocked up a few of my fave Low Syn Pasties and ate one for lunch with a load of Baked Beans. I know I’ve posted this recipe a few times before but it’s one I make quite often and since I did some today I thought I might as well re-post it for you. I love a Corned Beef Pasty but only when they’re made this way! For some reason the Wrap tastes so much better as Pastry than even Pastry does lol. So I’ve popped the recipe down below 👇🏻 as always just incase you want to give them a go. Trust me it’s worth it and they’re so quick and easy to make and you could always play around trying different fillings just Syn accordingly. XxEllexX

Makes 6 Pasties At 1/2 Syn + HEb each or 6.5 Syns Each If Not Using HEb.

Ingredients
2.5 Large Sized Potatoes, Peeled And Cut Into Chunks
Tin Of Princes Lean Corned Beef Reduced Fat Diced (3 Syns For The Whole Tin)
Pinch Of Salt And Pepper
Pinch Of Onion Granules
2 Eggs Beaten
6 White Weight Watchers Wraps (6 Syns Each Or HEb)
Fry-Light

Method
- [ ] Preheat your oven to 200c or Gas Mark 6. Spray a large baking tray with Fry-Light and pop the Potatoes in a pan with Water and a pinch of Salt to boil. Once soft, drain the Potatoes and leave them in the pan off the heat. Chuck the Corned Beef into the pan with a Pinch of Salt and Pepper and a Pinch of Onion Granuels, then mash well. Lay out a Wrap and brush the edges with the Beaten Egg. Then spoon in some of the Corned Beef and Potato Mixture onto one half of the Wrap, leaving plenty room for the edges (be careful not to overload it) then coat all around the edges again soaking them in the Beaten Egg. Fold the wrap over and cover the entire top In the Beaten egg and then seal the edges with a fork pressing hard to seal the Mixture inside leaving indents. Then pop onto the baking tray and repeat for the remaining Wraps. Put the tray into the oven for around 20 mins until they are golden brown. Or alternatively you can forget they’re in the oven and burn the hell out of them like I did today still delicious though lol 🙈 (That’s why I’m re-using an old photo lol 😂).

Ok ok I hold my hands up this wasn’t slimming and it wasn’t healthy per se…..but it was bloody delicious and so easy to make perfect for a night off or treat night! I shared it between 4 so it wasn’t overly bad 😈 but it tasted so good I have to share.
Apricot Chicken I served it with brown rice and roasted courgette.
I cooked the chicken until it was white through then on a low heat melted 250g Apricot jam, 1 garlic clove crushed, 1 Tbsp Light Soy Sauce, 1 Tbsp Rice Wine Vinegar and a level Tbsp of tomato purée. I added in some fresh Corriander once it had all mixed and created a sticky sauce then put the chicken in to simmer letting it soak up the sauce. It was amazing!

Comforting vegetable soup

This is my go to when I fancy something comforting. I make mine with lamb stock so it’s rich and tasty but you can make it with any stock you prefer and make it vegan/vegetarian etc as you wish but don’t be shy with the stock as a healthy dose gives it a savoury, comforting flavour. I’ll serve mine with not so healthy crusty rolls but everything is ok in moderation 😉. It’s so versatile you can use any vegetables you want I usually just chuck in what needs using up out the fridge. I bought a fancy new food chopper to save me dicing everything by hand and have been so excited to use it so this is my perfect opportunity lol 😂. XxEllexX
Serves 9-10

2 Level Tbsp Ground Black Pepper
Salt season to taste
2 Tsp Dried Ground Basil
2 Tsp Dried Ground Oregano
4 Tbsp Worcester Sauce
2 Large Onions Diced
4 Large Leeks Diced
3 Carrots Diced
1/4 Swede Diced
1 Large Baking Potato Diced
Few Sprigs Of Parsley Chopped
2 Vegetable Stock Cubes
1 Chicken Stock Pot
2 Lamb Stock Pots
2 Tins Of Chopped Tomatoes
1.5 Pints Of Boiling Water
Frylight
3 Cloves Of Garlic Crushed
Handful Of Fresh Corriander Chopped Stalks And All

Fry the onions, leeks and garlic in Frylight for a few mins then add in the salt, pepper, oregano and basil and cook to release the flavours for couple minutes. Add the diced vegetables and stir fry for a few minutes then add the vegetable stock cubes crumbling them in. Add the Worcester sauce, chopped tomatoes and all the stock pots, stir well and let simmer. After a few minutes add the water and bring to boil then turn the heat to medium/low and let simmer for around 20-25 minutes until all the veg is soft and soup has thickened then add in the chopped coriander and let simmer for a few minutes until it’s wilted. Then serve how you like, I don’t blend it as I prefer mine chunky but you can blend as a smooth soup if you like it that way. This recipe makes a heavy, rich vegetable soup which is usually perfect for winter nights but I really fancied some lol even though the weather is fair at the minute. Hope you enjoy as much as I do.

What you having tonight? Last night I made Ham salads with minted new pots, tonight Is a quick and easy vegetable teriyaki stir fry with noodles and tomorrow I’m making my fave home made veg soup with lamb stock and crusty rolls I’ll post the recipe for that tomorrow xx

What’s your fave type of food? For me it’s Mexican is god tier
Japanese and Thai are next then Indian that’s my fave go to types. I’m not a Chinese lover or pizza lover x

So today was shopping delivery day. On this day meal times are basically free for all’s lol no structure. Tomorrow I’m making tuna steaks with corn on the cob and rice or salmon sushi bowls. What’s for your tea? XxEllexX

What’s a staple meal on your shopping list? I’ve just done a monthly shop for meal items (I get snack and fresh fruit and things throughout the month). I’ve planned some yummy meals and just wondered what’s that one meal you ALWAYS make every month? Ours would be Fajitas or Chilli 🌶 yum! XxEllexX
