Your mind is a powerful thing, and speaking to yourself in a kind way, believing that you CAN succeed (and will!) is the very first step towards success. Lots of us have that little (pesky!) voice in our head that might be telling you that your dreams aren’t achievable (“I’ll never be slim”, “I’ll never be active”, “I’ll never look like that”) and the best way to stop fuelling these thoughts is to replace them with the belief that yes, you can! Wimbledon starts this week…time to get the strawberries and Pimms out. 🍓🎾

🍓Pimm’s Eton mess pots 🍓

A dessert made for that most British summer pairing – strawberries and tennis🍓🎾

🍓🍹Ingredients 🍹🍓

⭐️400g fresh strawberries, hulled and sliced
⭐️25ml Pimm’s No.1
⭐️400g fat-free natural fromage frais
⭐️4 plain meringue nests
⭐️Cucumber ribbons, to decorate

🤩Method 🤩

⭐️In a bowl, toss the strawberries in the Pimm’s and leave to marinate for 20 minutes. Drain and set aside a little of the liquid for drizzling later.

⭐️Stir half the strawberries into the fromage frais. Divide half the remaining strawberries between 4 dessert glasses. Then crumble a meringue nest into each, and top with the fromage frais mixture, followed by the remaining strawberries.

⭐️Pour over the reserved liquid, ensuring it’s divided evenly between the 4 glasses, and decorate each glass with a folded-up cucumber ribbon to serve.

🍹🧊Cocktail ice lollies🍹🧊

I live in hope that the sunshine will come back ☀️When it does these will be perfect to chill out on a hot summer evening….. just-for-grown-ups frozen treats.🍦🍹

🤩Ingredients🤩

For the Peach Bellini lollies:

⭐️500g peeled flesh of ripe peaches, cut into 1cm cubes
⭐️250ml diet lemonade
⭐️50ml sparkling dry white wine
⭐️1 level tbsp sweetener granules

For the raspberry gin and tonic lollies:

⭐️400g raspberries
⭐️160ml slimline tonic
⭐️35ml gin
⭐️200ml diet lemonade
⭐️1 tsp lime juice
⭐️1 level tbsp sweetener granules

🤩Method🤩

⭐️For the peach Bellini lollies: Divide the peaches between 8 x 100ml ice-lolly moulds. Mix together the liquid ingredients and the sweetener in a measuring jug and pour over the fruit in the moulds. Insert the lolly sticks and freeze for 5-6 hours, or until frozen.

⭐️For the raspberry gin and tonic lollies: Make the lollies following the same method as the peach Bellinis, above, and freeze for 5-6 hours, or until frozen.

⭐️To serve, dip the moulds into warm water for a few seconds and ease out the lollies.

🤩Recipe of the Week 🤩

🥙Chicken gyro salad with pittas🥙

Mamma mia, our marinated Greek-style chicken kebabs are so good. Go on, take a chance on them!

🌯🥙Ingredients🥙🌯

⭐️300g fat-free natural Greek yogurt
⭐️1 tsp lemon juice
⭐️2 tbsp red wine vinegar
⭐️6 garlic cloves, crushed
⭐️2 tsp ground cumin
⭐️1 tsp dried oregano
⭐️2 tsp sweet paprika
⭐️½ tsp ground cinnamon
⭐️8 large skinless and boneless chicken thighs, visible fat removed
⭐️2 small red onions, halved and thinly sliced
⭐️4 tomatoes, deseeded and thinly sliced
⭐️1 tsp sumac
⭐️½ medium cucumber, peeled and coarsely grated
⭐️2 tbsp chopped fresh dill
⭐️4 little gem lettuces, shredded
⭐️4 x 60g wholemeal pitta breads, toasted

🤩Method 🤩

⭐️Put 100g yogurt in a large bowl and stir in the lemon juice, 2 tsp vinegar, 4 crushed garlic cloves, the cumin, oregano, paprika, cinnamon, ½ tsp salt and some freshly ground black pepper. Add the chicken, mix to coat well and marinate in the fridge for up to 4 hours.
⭐️Preheat your oven to 220°C/fan 200°C/gas 7.
⭐️Put a rack in a large roasting tin (and line it with foil if you want to save on washing-up). Lift the chicken thighs out of the marinade, lay them on the rack and roast for 20-25 minutes or until the chicken is nicely browned at the edges and cooked through.
⭐️Meanwhile, put the red onions in a small bowl with 1 tbsp vinegar and a pinch of salt and mix well. Set aside for a few minutes, then stir in the tomatoes and sumac and season to taste.
⭐️For the tzatziki, put the grated cucumber in a clean tea towel or a few layers of kitchen paper and squeeze out as much water as you can. Tip the cucumber into a bowl and stir in the remaining vinegar, garlic and yogurt, plus the dill and some seasoning to taste.
⭐️Divide the lettuce between plates and spoon over the tomatoes and onions. Slice the chicken and add that too, plus a big dollop of tzatziki. Serve with the pitta breads and stuff as much into them as you can! This would be great for a packed lunch or picnic, too – just pack the tzatziki and pittas separately.

It’s National BBQ week and who doesn’t love a taste of the summer sizzle! With Slimming World, you can enjoy BBQ favourites with your friends and family – while losing weight too! 🤩Recipe of the Week 🤩

We are into the second week of tomato fortnight. 🍅

🥗🍅Tomato tart with courgette salad🍅🥗

Team juicy baby tomatoes with aromatic thyme – it’s a perfect combo!

🤩Ingredients🤩

⭐️700g mix of red and yellow cherry and baby plum tomatoes, halved
⭐️Low-calorie cooking spray
⭐️2 x 39g filo pastry sheets, at room temperature
⭐️Small handful of fresh thyme leaves, plus a few whole sprigs to serve
⭐️800g small new potatoes
⭐️Small handful of fresh mint, roughly torn

For the salad:

⭐️200g mixed salad leaves
⭐️1 courgette, cut into ribbons with a vegetable peeler
⭐️2 tbsp fat-free vinaigrette

🤩Method 🤩

⭐️Preheat your oven to 150°C/fan 130°C/gas 2.

⭐️Line a large baking tray with baking paper. Put the tomatoes on the tray cut-side up, spray with low-calorie cooking spray and season lightly. Bake for 1 hour until semi-dried, then transfer to a plate.

⭐️Turn your oven up to 200°C/fan 180°C/gas 6. Line the baking tray with fresh baking paper. Cut each pastry sheet in half and stack the halves on the tray, spraying each layer with low-calorie cooking spray as you go. Scatter the roasted tomatoes on top of the pastry stack and sprinkle with thyme leaves and lots of black pepper. Bake for 10 minutes, or until the pastry is crisp and golden.

⭐️Meanwhile, boil the potatoes for 10-15 minutes, or until tender, then drain, toss with the mint and season lightly. Toss all the salad ingredients together in a bowl. Cut the tart into 4, and serve with the potatoes, salad and with the thyme sprigs scattered over.
