I haven't cooked much in the last 3 months.
Packing up our life in the UK whilst working full time. Moving countries. Visiting friends and family. Travelling to Brazil. Staying at people's houses. Staying in airbnb with varying levels of cooking equipment.
I missed cooking so much. The taste of my meals. The ritual of peeling, slicing, mixing. The smells coming from the hotpot. The joy of serving food to my loved ones.
So now, I celebrate my new kitchen, with a new view and the simplicity of meals created from delicious ingredients.
On the plate:
🥄Roasted tomato, red peppers & soup cooked in a chicken stock (using carcasses, hearts, lots of spices and root vegetables). Served with a sourdough roll, extra virgin olive oil and Maldon sea salt flakes.
Utterly simple and utterly delicious!
