Fish Curry

Ingredients

1 Lemon

1 onion

2 garlic cloves

1 ginger (thumb-sized piece)

1 tablespoon curry powder

1 teaspoon turmeric

1 big teaspoon cumin powder

1 big teaspoon coriander powder

3 tablespoons curry paste (tikka/madras)

1 fresh red chilli or teaspoon chilipowder

400 grams white fish fillets (frozen or fresh)

200 ml coconut milk

200 gram chopped tin tomato

Handful fresh coriander

Olive oil

Salt

Cooking Instructions:

1. Cut the lemon in half, cut one half into wedges for serving later, then squeeze the juice of the other half on to a large plate and add 1 tablespoon of tikka paste.

2. Mix together, then massage all over the frozen/fresh fish and leave aside in a single layer to marinate and defrost.

3. Peel and slice the onion, garlic and ginger with the chilli and coriander stalks, then place it all in a large casserole pan or wok on a medium heat with a lug of oil and the remaining tikka paste

4. Add all the dry spices and fry them all together for 2-3 minutes

5. Add the chopped tomatoes , 1 cup of water and teaspoon of salt and let it cook for about 10 minutes until the onion becomes soft

6. Add the coconut milk and let simmer for 10 minutes, add more water if necessary

7. Add the fish and chopped coriander leaves and simmer slow for 10 minutes or until the fish is cooked

8. Add more salt if needed and place everything in a serving platter

9. Squeeze the lemon over the top

Serve with basmati rice, naan bread or any other side’s.

Fancy something a little different? Why not try this tasty Italian Stuffed Chicken recipe. 👇⁠


• 110g chicken breast⁠
• 30g mozzarella, pulled⁠
• 20g pine nuts⁠
• 10g basil, shredded⁠
• 1 garlic clove, minced⁠
• 5 cherry tomatoes, chopped⁠
• 1 tsp oregano⁠
• 30g red onion, finely diced⁠
• 50g green beans⁠
• 50g asparagus⁠
• 100g rocket and spinach⁠

1. Slice a cavity into the side of the chicken breast.⁠
2. In a mixing bowl, combine the mozzarella, tomatoes, basil, garlic,⁠
red onion and oregano.⁠
3. Fill the chicken breast with the filling.⁠
4. Toast the pine nuts in a dry pan and crush with the back of a knife or in a pestle and mortar.⁠
5. Crumble the pine nuts over the chicken breast.⁠
6. Place on a baking tray and wrap in foil.⁠
7. Bake for 25 minutes at 160C.⁠
8. Remove from the oven and serve with the steamed green⁠
vegetables, rocket and spinach.⁠
