Just wrapped up my Sunday night with a delicious homemade Thai Red Curry, and it was absolutely divine!
Made with succulent chicken thighs, vibrant veggies, and a rich, fragrant red curry sauce, it felt like a mini getaway to Thailand right from my kitchen.

I love how easy it is to whip up this dish, and it’s perfect for a cozy night in. The combination of coconut milk and Thai red curry paste creates such a comforting flavor, and the fresh Coriander on top adds that perfect finishing touch!
