This protein-packed breakfast pot is loaded with beans, spinach, tomatoes, a Healthy Extra calcium choice of golden halloumi and a soft-boiled egg for a filling start to the day 🍳.
‘To save time in the kitchen, why not make an extra and keep it for tomorrow. After boiling your egg for six minutes, place the egg into an ice bath to stop it cooking further and help keep the yolk soft-set. When ready to eat the next day, pop the breakfast pot in the microwave for 2 minutes, or until piping hot, adding the soft-boiled egg for the final 30 – 45 seconds. Pierce or halve the egg before reheating.
