A root‑cause look at Ozempic, GLP‑1 and the gut

This topic is everywhere at the moment, but so much of the conversation is missing the deeper “why”.
Our bodies aren’t failing us — they’re responding to the environment we give them. When we understand that, everything changes.

Don’t be fooled by clever marketing…

“Supporting brain function with iron”
“Reduces tiredness & fatigue”
“Vitamin D for healthy bones”

Sounds nourishing, right?

But this is what happens when food is so heavily processed and heat-treated that nothing meaningful is left.

So instead… they spray it with synthetic vitamins — folic acid, isolated iron, lab-made vitamin D — and present it as “healthy”.

This isn’t nourishment.
It’s reconstruction.

We’ve gone from food that builds health…

“You have too much stomach acid.”

The Doctor Who Figured It Out Too Early (1950s)
He removed sugar. His patients got better. Medicine looked away.

1950s Austria.
Dr. Wolfgang Lutz is doing everything right.
Prescribing approved drugs. Following modern guidelines. Trusting the science of his time.

His patients keep coming back.
Diabetes controlled, not reversed.
Pain managed, not resolved.
Chronic disease after chronic disease.

So Lutz does something risky.
He thinks.

He digs into old medical literature. Before processed food. Before pharmaceutical dominance. Before calories became doctrine. One idea keeps reappearing.

Low carbohydrate eating.

He is skeptical. But honest. So he tries it on patients who have failed everything else.

His rules are simple.
Under 72 grams of carbohydrates per day.
No limits on meat, eggs, cheese, or butter.
Real food. No sugar. Minimal starch.

The results shock him.
Blood sugar normalizes.
Weight drops without hunger.
Inflammation fades.
Digestive disorders disappear.
Arthritis improves.

People do not just comply.
They recover.

So he keeps going. For decades. Thousands of patients. Same result every time.

Remove sugar and starch. Health returns.

In 1967, he publishes Leben Ohne Brot.
Life Without Bread.
Real patients. Real outcomes. Clear instructions.

Medicine ignores it.

This is the age of low-fat dogma. Margarine. Vegetable oils. Carbs as salvation. A doctor prescribing butter and steak is labeled as dangerous.

Lutz keeps going anyway.
He has something stronger than consensus.
He has results.

In 2000, at age 89, he publishes follow-up data. Patients low carb for over 30 years. Healthy. No early death. No arterial collapse. No cholesterol catastrophe.

He dies at 97.
Still low carb.
Still right.

We did not lack evidence.
We lacked courage.

Mouth breathing is more important than we realise.

It affects jaw development.
It affects sleep.
It affects behaviour.

And it doesn’t just stop in childhood.

When the tongue isn’t resting on the palate, the jaw can narrow. When sleep is disrupted, the nervous system struggles. When nourishment is lacking, structure changes.

I’ve just shared a new blog on oxalates — something that’s often overlooked, yet increasingly relevant for many people today.
Oxalates are naturally found in plant foods, but modern diets, loss of traditional food preparation and changes in gut bacteria mean far more people are struggling with them than ever before. For some, they can contribute to digestive issues, kidney stones, joint pain, skin flare-ups, fatigue and inflammation — especially when gut health is compromised.

I’m sharing this in regards to a recent article from Zoe suggesting that butter is harmful and that seed oils are the healthier choice. I’ve had several messages recently with people feeling overwhelmed by nutrition headlines — and I completely understand why.
Butter has been part of traditional human diets for thousands of years. Across many cultures it was valued for nourishment, fertility and strength, long before modern chronic disease became common.

Seed oils such as sunflower, rapeseed/canola, corn and soy, on the other hand, have only been widely consumed for just over 100 years. Their production relies on industrial processing, high heat and chemical extraction — and these oils are far more prone to oxidation than traditional fats.

It’s also important to understand the wider context of where this messaging comes from. Zoe is not a neutral public health body — it’s a venture-capital-funded company, meaning it has received large sums of money from private investors whose aim is growth and profit. Much of the research Zoe promotes is funded or conducted by the company itself, with senior figures involved.
That doesn’t automatically make the research “wrong”. But it does mean there are commercial interests at play, and it’s reasonable to read the conclusions with that context in mind.

Many respected voices in ancestral and functional nutrition — including Dr Weston A. Price, Sally Fallon, Cate Shanahan, Nina Teicholz and Paul Saladino — tell a very different story. Their work consistently highlights the value of traditional fats and raises concerns about industrial seed oils.

Nutrition science is complex, and no single study or headline tells the whole story.
For me, real nutrition should reduce confusion, not add to it.

The foods that have nourished humans for generations are the ones we can trust most.
