If you chop up broccoli and let it sit out for at least 10 minutes before cooking it, you significantly increase the formation of the powerful cancer-fighting compound sulforaphane in the brocolli.

The Science Behind the “Chop and Wait Method”:

Broccoli contains two components stored separately in the plant’s cells: glucoraphanin (a precursor to sulforaphane) and the enzyme myrosinase. Chopping or chewing the vegetable breaks the cell walls, allowing these two compounds to mix and form the active sulforaphane.

The myrosinase enzyme is very sensitive to heat and is quickly destroyed during cooking. By letting the chopped broccoli sit for a period before cooking, you allow the enzyme sufficient time to convert a significant amount of the glucoraphanin into sulforaphane, which is a more heat-stable compound.

Recommended Waiting Times:

While even a short wait is beneficial, studies suggest different optimal times:
